To make carrot methi sabzi, chop the carrots and methi leaves and keep ready. Heat the oil and temper with cumin seeds. Add onions, ginger and green chillies and saute for 2 minutes. Add fenugreek leaves and saute for 2 minutes. Add the carrots, turmeric powder, coriander powder, salt and 1 cup of water, mix well, cover and cook over a slow flame till all the moisture has evaporated and the carrots are tender.

Gajar methi sabzi is a great recipe that boosts immunity, eat this often for a stronger you. Ingredients
For Carrot Methi Subzi
2 cups chopped carrot
2 cups chopped fenugreek leaves (methi) leaves
1/2 tsp cumin seeds (jeera)
3/4 cup finely chopped onion
3 to 4 finely chopped green chillies
1 garlic (lehsun) , finely chopped
12 mm finely chopped ginger (adrak)
1/4 tsp turmeric powder (haldi)
2 tsp coriander (dhania) powder
2 tsp oil
salt to taste
Method
- To make carrot methi sabzi recipe, heat the oil in a non-stick kadhai and add the cumin seeds.
- When they crackle, add the onions, green chillies, garlic and ginger and sauté on a medium flame for 2 minutes.
- Add the fenugreek leaves and sauté on a medium flame for another 2 minutes.
- Add the carrots, turmeric powder, coriander powder, salt and 1 cup of water, mix well, cover and cook over a slow flame till all the moisture has evaporated and the carrots are tender.
- Serve the carrot methi sabzi hot with phulkas.

Cover with a lid and cook over a slow flame till all the moisture has evaporated and the carrots are tender. This will take approx. 7 to 8 minutes.

I have found this recipe when searched for Vitamin A recipes. Tried this version.Very balanced curry. No bitterness even though methi used. Carrot and methi good for eyes especially for kids who have Eye problems. Thankyou for posting this recipe.
