Layered Fruit Sandesh: A Refreshing and Healthy Bengali Dessert

The Layered Fruit Sandesh is a true masterpiece that expertly combines the joy of a fruit salad with the classic appeal of a Bengali delicacy. This eye-catching dessert, also known as Refreshing Fruit & Paneer Bengali dessert, features alternating layers of sweetened and spiced paneer with vibrant, fresh fruits like pomegranate, kiwi, apple, and pineapple. The overall presentation in a shot glass makes this dainty dessert a particularly pretty sight, enhanced by the contrasting colors and textures.

Crafting the Sweet and Aromatic Paneer Base

The heart of this dessert is the flavored sandesh base. The recipe calls for 1 1/4 cups crumbled paneer (cottage cheese), which forms a protein-rich foundation. To sweeten and flavor it, combine the paneer with 4 tbsp icing sugar and a few drops of kewra essence. The kewra essence infuses the sandesh with a distinct, appealing floral aroma. The mixture is then kneaded into soft dough and refrigerated for 30 minutes to firm up slightly.

Health Benefits of this Wholesome Dessert

This version of sandesh is a notably healthy dessert option. By focusing on fresh fruit and paneer, it offers a great source of essential nutrients. Paneer provides high-quality protein and calcium, which are vital for bone health and muscle maintenance. The copious use of fruits—pomegranate, kiwi, apple, and pineapple—significantly boosts the content of fiber, vitamins, and antioxidants. The juiciness and naturally vibrant flavors of the fruits allow for minimal sugar usage, making it a much lighter alternative to traditional Indian sweets. You could reduce or remove the usage of sugar in the recipe.

Preparing the Fresh Fruit Layers

The dessert uses a medley of fruits to provide a burst of natural flavor and texture. You will need 1/4 cup pomegranate seeds (anardana), 1/4 cup finely chopped kiwi}, 1/4  cup finely chopped apple}, and 1/4  cup finely chopped pineapple}. The juiciness and natural sweetness of these fruits contrast beautifully with the mild sweetness and succulence of the sandesh. Ensuring the fruits are finely chopped creates a smooth layering experience.

The Artistic Layering Process

The presentation is key to the Layered Fruit Sandesh. First, divide the paneer mixture into 20 equal portions. Take a shot glass and use one portion of the paneer mixture to form the first layer, spreading it evenly. Then, sprinkle a few pomegranate seeds evenly over it. The next layer is another portion of the paneer mixture, followed by a layer of kiwi. Continue with another paneer layer, then apple, and finish with the final paneer layer and pineapple on top. Repeat this layering to make 4 more shot glasses (for a total of five servings).

Setting and Serving the Kewra-Infused Delight

Once all the layers are assembled in the glasses, the dessert needs time to set. Refrigerate for 1 hour to allow the layers to hold their shape and for the flavors to meld. The Kewra-Infused Fruit Sandesh is a light and satiating treat, providing a delightful texture contrast between the smooth paneer and the crunchy fruits. It must be served immediately upon removing it from the refrigerator to enjoy its fresh, cool texture.
