  1. To make laal math dal fry, clean, wash and soak the moong dal for 1/2 an hour.
  2. Drain, add the turmeric powder and 11/2 cups of water, mix well and pressure cook for 2 whistles.
  3. Allow the steam to escape before opening the lid. Keep aside.
  4. Heat the coconut oil or oil in a broad pan and add the mustard seeds.
  5. When the seeds crackle, add the green chillies, ginger, garlic and onions and sauté on a medium flame till the onions turn translucent.
  6. Add the pandi chillies, asafoetida, amaranth leaves and sauté on a medium flame for 5 minutes.
  7. Add the moong dal, salt and 1/2 cup water. Mix well and simmer for 5 to 7 minutes, stirring once in between.
  8. Serve laal math dal fry hot.

  1. Red Chawli leaves is a popular leafy vegetable grown all over India. They are found all around the year with peak season being Summer. The leaves are ready for harvesting post 4-6 weeks of sowing. The young leaves are slightly astringent when raw, but mildly nutty.   12. Add the cooked moong dal.
  13. Add salt to taste. We added 1/2 tsp salt. 
  14. Add 1/2 cup water.
  15. Mix well.
  16. Simmer for 5 to 7 minutes, stirring once in between.
  17. Serve laal math dal fry | red chawli leaves dal | red amaranth leaves dal | healthy amaranth dal | hot.

It''s so nice and tasty, I never had red leaf vegetables before. But when I saw the recipe and found his mush nutrition is it. Also with fried onion, it was awesome.
