    Method
  1. Combine 1 cup of milk, milk powder and cornflour in a bowl and mix well using a whisk. Keep aside.
  2. Dissolve the saffron in ¼ cup of warm milk and keep aside.
  3. Combine the remaining ¾ cup of milk, sugar, saffron-milk mixture and cardamom powder, mix well in a deep non-stick pan and cook on a medium flame for 4 minutes, while stirring occasionally.
  4. Add the milk, milk powder and cornflour mixture, mix well and cook on a medium flame for 4 to 5 minutes, while stirring continuously.
  5. Allow the mixture to cool completely.
  6. Once cooled, add the fresh cream, mix well and pour the mixture into a shallow aluminium container. Cover with an aluminium foil and freeze for 6 hours or till semi-set.
  7. Pour the mixture into a mixer and blend till smooth.
  8. Transfer the mixture back into the same aluminium shallow container. Cover with an aluminium foil and freeze for approx. 10 hours or till set.
  9. Scoop and serve immediately.

Yesterday afternoon I had bought all the items except kesar and elaichi and we had prepared icecream and it is tasting very nice but can you tell me why is it liquid after it kept it in freezer?

Tarla Dalal    Ensure that you have placed the container in the freezer in the upper rack. Secondly the temperature is to the maximum for ice-cream to set. Also make sure the freezer is not half empty and not full. Hope this helps.

why it is necessary to add milk powder can not we do without it as I tried this recipe without milk powder

Tarla Dalal    In this recipe, we have added milk powder because it provides a creamy texture to the ice-cream. If you really want to skip adding milk powder, you can refer to our other ice-cream recipes and add kesar, elaichi to it. Thank you!
