For the dough- Combine all the ingredients in a bowl, mix well and knead into a semi-soft dough using enough water.
- Cover with a lid and keep aside for 15 minutes.
How to proceed- To make chilli cheese paratha, divide the stuffing into 6 equal portions and keep aside.
- Divide the dough into 12 equal portions.
- Roll out 2 portions of the dough into a 150 mm. (6”) diameter circle using a little whole wheat flour for rolling.
- Place a rolled circle on a clean, dry surface, spread one portion of the stuffing evenly over it. Cover it with another rolled circle and press it gently to seal the edges.
- Heat a non-stick tava (griddle) and cook the paratha, using 1 tsp of oil , till it turns golden brown in colour from both the sides.
- Repeat steps 3 to 5 to make 5 more parathas.
- Serve the chilli cheese paratha immediately.

They can be as simple as the plain paratha or something as filling as the mooli paratha or the dal paratha. You can even mix together all the ingredients to prepare a delightful dough and then roll out a paratha just like we have done in the below mentioned mixed vegetable parantha recipe. This is a quick and easy version of the authentic veg paratha. Check out these suggestions to make similar parathas for breakfast or lunch :

For the stuffing of chilli cheese paratha, in a deep bowl take finely chopped green chillies.

Add finely chopped capsicum. They give a nice bite to the chilli cheese paratha recipe. Alternatively, you can add any vegetables of your choice like spring onion, cabbage, carrot, bell pepper etc.

Add grated processed cheese. Processed cheese can be replaced with mozzarella, cheddar cheese, Monterey jack to make the cheese chilli paratha.

Add finely chopped onions. Ensure that all the veggies are either finely chopped or grated. This helps in rolling the cheese chilli paratha easily.

Mix everything well and keep aside. Divide the stuffing into 6 equal portions.

To make dough for vegetable and cheese paratha, in a deep bowl, take whole wheat flour. You can use a combination of maida and atta to keep the paratha healthy yet soft.

Add oil. Oil can be replaced with ghee or butter.

Add salt to taste.

Gradually, add water to combine all the ingredients.

Mix well and knead into a semi-soft dough using enough water. The quantity of water will depend upon the quality of the flour. Our dough for chilli cheese parathas is ready.

Cover with a lid and keep aside for 15 minutes.

After 15 minutes, divide the dough into 12 equal portions and keep aside.

To prepare chilli cheese paratha, roll out 2 portions of the dough into a 150 mm. (6”) diameter circle using a little whole wheat flour for rolling. Do not roll out too thin or else the stuffing will ooze out while cooking.

Place a rolled circle on a clean, dry surface.

Spread one portion of the stuffing evenly over it. Cook one side of the paratha till you see small bubbles on top of the cheese chilly paratha.

Cover it with another rolled circle and press it gently to seal the edges.

Heat a non-stick tava (griddle) and place the paratha.

Drizzle 1 tsp of oil over the paratha. Oil can be swapped with ghee or butter to make cheese chilli paratha tastier.
