To make cheese and broccoli tikki, heat the olive oil in a broad non-stick pan, add the onions, ginger-garlic paste and green chillies and sauté on a medium flame for 2 minutes. Add the broccoli and salt and sauté on a slow flame for 3 minutes. Keep aside to cool completely. Once cooled, transfer the broccoli mixture into a deep bowl, add the potatoes and cheese and mix well. Divide the mixture into 4 equal portions and shape each portion into a 50 mm. (2”) diameter round flat tikkis. Heat a non-stick tava (griddle) and cook the tikkis using olive oil, till they turn golden brown in colour from both the sides. Serve immediately.

What are Tikkis?

 

    1. What are tikkis? Tikkis are small round or oval-shaped snacks, usually around 2 or 3 inches in diameter. Normally, potatoes are mixed with other ingredients like herbs, spices, dals, sprouts and other veggies too. This dough-like mixture is then shaped and cooked. They can be deep-fried or shallow-fried. Nowadays, we also encounter healthy versions that are baked or tava-cooked. We also see health-conscious people going for ingredients like oats and nachni flour to bind their tikkis instead of mashed potatoes.
How to make cheese and broccoli tikki

 

    1. To prepare the mixture for cheese and broccoli tikki recipe | cheese cutlet | Indian broccoli cheese tikki | cheesy broccoli tikki Indian starter, heat the olive oil in a broad non-stick pan
    2. Once the oil is hot, add the onions.
    3. Add ginger-garlic paste. This homemade Ginger-Garlic Paste has a more dynamic flavour than the store-bought ones
    4. Add green chillies.
    5. Sauté on a medium flame for 2 minutes or until the raw smell goes away.
    6. Add broccoli. Wash and clean broccoli florets & chop them finely before using in the Broccoli Cheese Tikki. You can even mince the broccoli florets in a food processor. If you are someone who doesn’t like the flavour of raw broccoli much then blanch the florets and chop them before making the broccoli cheese tikki mixture.
    7. Add salt.
    8. Mix well and sauté on a slow flame for 3 minutes. Overcooking broccoli will lead to nutritional loss.  Keep aside to cool completely.
    9. Once cooled, transfer the broccoli mixture into a deep bowl.
    10. Add the potatoes. Wash and pressure cook potato with a cup of water for 2-3 whistles. Once pressure released, cool the potatoes completely, peel, grate them and use in the broccoli cutlet. Ensure there is no or less moisture in the mixture.
    11. Add cheese. The combination of cheese and broccoli tastes delicious and you can use any variety of cheese in this tikki mixture.

    16. Pour olive oil around the broccoli patties to cook.

i was skeptical to try this recipe because of broccoli, but when i made these tikkis it was an instant hit amongst my fly. sania loved it so much that she did not realize it has broccoli in it. bread crumbs imparted crisp texture and it looked quite appealing. I made heart shaped tikkis as i could not manage to get star shaped mould..

I''ll be honest, nobody in my house is a big fan of broccoli apart from me. I decided to try out the recipe either way since I thought that I would eat it even nobody else did. After a little convincing and the wonderful aroma of the dish I managed to convince them to have a bite. Lo and behold! Nobody could eat just one and the plate was wiped clean. Tasted very good but took about an hour to pan fry the tikkis on pan. Can you please post oven baking / oven broil cooking instructions so that all the tikkis can be made same time
