We have made this incredibly tasty homemade brown bread with 100% whole wheat flour which is actually lower in calories than regular whole wheat brown bread recipe. We have reduced the amount of sugar and olive oil used in the low calorie brown bread.

If you wish to make low calorie whole wheat bread the first thing to do is learn how to handle the yeast – the temperature of the water is very important to activate the yeast. If the water is too hot or too cold, the yeast-water mixture will not froth at all, and you are unlikely to get soft and spongy healthy Indian brown bread. But, once you take care to activate your yeast with lukewarm water, then making this low calorie brown bread is a breeze.

In India, packaged whole wheat bread is sadly not made with 100% whole wheat and often mixed with 25% plain flour making it a lighter and unhealthy bread. Hence it’s always better to make your low calorie brown bread at home. Nothing beats the joy of baking your own 100% whole wheat brown bread.

  1. To make low calorie brown bread, combine the yeast, sugar and ¼ cup of warm water in a bowl, cover it with a lid and keep aside for 10 minutes.
  2. Combine the whole wheat flour, salt and yeast-sugar mixture in a deep bowl, mix well and knead into a soft dough using enough warm water.
  3. Add the olive oil and knead very well till the dough is smooth.
  4. Shape the dough into a proper round using both your hands while tucking the edges at the bottom.
  5. Cover it with a dry muslin cloth and keep aside in a warm place for 45 minutes or till the dough is double in size.
  6. Sprinkle the whole wheat flour over a smooth, flat surface, place the dough over it and knead it very well using both your hands. If the dough is getting sticky while kneading, then sprinkle little whole wheat flour as required.
  7. Tap the dough with your fingers and spread it to make a 250 mm. X 200 mm. (10” x 8”) diameter oval shape.
  8. Roll the dough to make a 200 mm. (8”) long cylindrical roll and place it in a greased bread loaf tin. Cover it with a dry muslin cloth and again keep aside in a warm place for 30 minutes.
  9. Bake it in a pre-heated oven at 200°c (400°f) for 10 minutes.
  10. Lower the temperature to 180°c (360°f) and bake it for 20 minutes.
  11. Once the bread loaf is slightly cooled, de-mould it and keep aside to cool slightly.
  12. Brush the bread loaf with little olive oil.
  13. Once the bread loaf has cooled completely, cut it into 13 mm. ( ½’) bread slices.
  14. Serve the low calorie brown bread immediately or use as required.

    1. My brown bread is dense? All healthy breads will be dense. The heavier the better. This is a 100% whole wheat bread recipe. The regular bread you get at stores is made of plain flour which is light in weight and cheap. 
My brown bread loaf was a little hard?

 

    1. My brown bread loaf was a little hard anf got some fermetned taste?  I would also advice you to brush olive oil immediately on the brown bread loaf, once it is out of the oven. After olive oil is brushed, let it cool completely on it’s own, this will help in making the whole wheat loaf soft and also firm from inside. When the loaf is hot, the cooking process is continued till it is cooled completely. You will also not get the fermented taste.

Dough for brown bread

 

    1. To make the dough for 100% brown bread, in a small bowl, take yeast. We are using instant dry yeast for the nutritious atta bread recipe. The brown bread recipe calls for 1 tbsp of instant dry yeast. You can also use 12gms fresh yeast instead. The procedure to make the yeast mixture remains the same as per the recipe.
    2. Add the sugar. Sugar has multiple roles in bread making. One being it acts as a food for yeast and helps in creating carbon dioxide and alcohol. It also enhances the flavour of the bread, retains the moisture content and give a crumbly texture & golden crust to the brown bread.
    3. Pour ¼ cup of warm water in the bowl. Before pouring the water, dip your finger in water to check if it’s lukewarm or no. Water that's too hot can damage or kill the yeast.
    4. Mix well.
    5. Cover it with a lid and keep aside for 10 minutes. The rising time will vary as per the climatic conditions.
    6. After 10 minutes, open the lid and you can see a frothy layer on top which indicates our yeast has been activated and is ready to use. If you don’t see a creamy frothy layer then discard the yeast and start over again.
    7. For preparing the dough for brown bread, in a deep bowl take whole wheat flour. This being a healthy recipe we will be using gehun ka atta unlike refined flour which is used in most bread recipes. Take a big bowl as the dough will rise on resting and you would want to prevent it from overflowing. Many people even use half wheat flour and half refined flour.
    8. Add salt.
    9. Add yeast-sugar.
    10. Mix well gradually add warm water.
    11. Knead into a soft dough.
    12. Add olive oil and knead very well till the dough is smooth.
    13. Shape the dough into a proper round using both your hands while tucking the edges at the bottom.
    14. Cover it with a damp muslin cloth and keep aside in a warm place for 45 minutes or till the dough is double in size.
    15. After 45 minutes, you will notice the dough has risen.
    16. Sprinkle the whole wheat flour over a smooth, flat surface, place the dough over it. You can also make use of your kitchen platform to do this step.
    17. Knead it very well using both your hands. If the dough is getting sticky while kneading, then sprinkle little whole wheat flour as required.
How to make brown bread

 

    1. To make 100% low calorie brown breadGrease a bread loaf tin of 200 mm. (8”) with the help of olive oil.
    2. Tap the dough with your fingers and spread it to make a 250 mm. X 200 mm. (10” x 8”) diameter oval shape.
    3. Roll the dough to make a 200 mm. (8”) long cylindrical roll.
    4. After the final roll, pinch the open edges to the bottom of the dough so, it does not rise while baking.
    5. Place the dough roll in a greased bread loaf tin with pinched part facing downwards and press it lightly so it's even from all the sides.
    6. Cover it with a damp muslin cloth and again keep aside in a warm place for 30 minutes.
    7. After 30 minutes, our brown bread dough would look like this.
    8. Bake it in a preheated oven at 200°c (400°f) for 10 minutes.
    9. Lower the temperature to 180°c (360°f) and bake it for 30 minutes. The time required will vary from oven to oven so, do keep an eye on the bread while baking.
    10. While the bread is warm, loosen the edges with the help of a bread knife.
    11. Keep the brown bread loaf made using instant dry yeast aside to cool slightly De-mould the brown bread loaf.
    12. Brush it with olive oil and keep aside to cool completely. This helps in keeping the bread soft.
    13. Once the bread loaf has cooled completely, cut it into 13 mm. (½“) bread slices.

I''ve not tried this recipe yet but want to and will as soon as I have an answer to my questions. The standard yeast packet is now 2.25 teaspoons. 1 tablespoon is 3 teaspoons. Since this recipe calls for 1 tablespoon yeast, will one yeast packet suffice or should I open two packets and measure? I''m looking forward to making this bread. Thank you.

Hi Vijay any sunflower oil, canola oil, ricebran oil you can use. We dont promote any brand saffola, sundrop.... loads of them are there.... mustard oil gives a peculiar taste ans smell, any other oil will not change the taste.
