I would like to share some important tips to make the perfect 100% whole wheat bread. 1. Ensure that the water to which you add the yeast is luke warm. If it is too hot or cold, the yeast will not get activated, and your whole wheat bread will not have the proper texture. 2. Sugar has multiple roles in bread making. One being it acts as a food for yeast and helps in creating carbon dioxide and alcohol. It also enhances the flavour of the bread, retains the moisture content and give a crumbly texture and golden crust to the whole wheat bread. 3. Always bake your whole wheat bread in the middle rack for even cooking. 4. Pre heat your oven 10 minutes before you bake.
In India, packaged whole wheat bread is sadly not made with 100% whole wheat and often mixed with 25% plain flour making it a lighter and unhealthy bread. Hence it’s always better to make your whole wheat bread at home. Nothing beats the joy of baking your own 100% whole wheat bread.

For whole wheat bread- To make whole wheat bread, combine the yeast, sugar and ¼ cup of warm water in a bowl, cover it with a lid and keep aside for 10 minutes.
- Combine the whole wheat flour, salt and yeast-sugar mixture in a deep bowl, mix well and knead into a soft dough using enough warm water.
- Add the olive oil and knead very well till the dough is smooth.
- Shape the dough into a proper round using both your hands while tucking the edges at the bottom.
- Cover it with a dry muslin cloth and keep aside in a warm place for 45 minutes or till the dough is double in size.
- Sprinkle the whole wheat flour over a smooth, flat surface, place the dough over it and knead it very well using both your hands. If the dough is getting sticky while kneading, then sprinkle little whole wheat flour as required.
- Tap the dough with your fingers and spread it to make a 250mm. X 200 mm. (10” x 8”) diameter oval shape.
- Roll the dough to make a 200 mm. (8”) long cylindrical roll and place it in a greased bread loaf tin. Cover it with a dry muslin cloth and again keep aside in a warm place for 30 minutes.
- Bake it in a pre-heated oven at 200°c (400°f) for 10 minutes.
- Lower the temperature to 180°c (360°f) and bake it for 30 minutes.
- Brush the the whole wheat bread loaf with butter and keep aside to cool slightly.
- Once the the whole wheat bread loaf is slightly cooled, de-mould it and keep aside to cool completely.
- Once the whole wheat bread loaf has cooled completely, cut it into 13 mm. ( ½“) bread slices.
- Serve or use the whole wheat bread as required.

To make the dough for 100% whole wheat bread, in a small bowl, take yeast. We are using instant dry yeast for the nutritious atta bread recipe. The whole wheat bread recipe calls for 1 tbsp of instant dry yeast. You can also use 12gms fresh yeast instead. The procedure to make the yeast mixture remains the same as per the recipe.

Pour ¼ cup of warm water in the bowl. Before pouring the water, dip your finger in water to check if it’s lukewarm or no. Water that's too hot can damage or kill the yeast.

Cover it with a lid and keep aside for 10 minutes. The rising time will vary as per the climatic conditions.

After 10 minutes, open the lid and you can see a frothy layer on top which indicates our yeast has been activated and is ready to use. If you don’t see a creamy frothy layer then discard the yeast and start over again.

For preparing the dough for whole wheat bread, in a deep bowl take whole wheat flour. This being a healthy recipe we will be using gehun ka atta unlike refined flour which is used in most bread recipes. Take a big bowl as the dough will rise on resting and you would want to prevent it from overflowing. Many people even use half wheat flour and half refined flour.

Knead into a soft dough.

Add olive oil and knead very well till the dough is smooth. To keep the recipe healthy, we have used olive oil but, you can also make use of soft butter.

Shape the dough into a proper round using both your hands while tucking the edges at the bottom.

Cover it with a damp muslin cloth and keep aside in a warm place for 45 minutes or till the dough is double in size.

After 45 minutes, you will notice the dough has risen.

Sprinkle the whole wheat flour over a smooth, flat surface, place the dough over it. You can also make use of your kitchen platform to do this step.

Knead it very well using both your hands. If the dough is getting sticky while kneading, then sprinkle little whole wheat flour as required.

To make 100% whole wheat bread, Grease a bread loaf tin of 200 mm. (8”) with the help of olive oil.

Tap the dough with your fingers and spread it to make a 250mm. X 200 mm. (10” x 8”) diameter oval shape.

Roll the dough to make a 200 mm. (8”) long cylindrical roll.

After the final roll, pinch the open edges to the bottom of the dough so, it does not rise while baking.

Place the dough roll in a greased bread loaf tin with pinched part facing downwards.

Press it lightly so it's even from all the sides.

Cover it with a damp muslin cloth and again keep aside in a warm place for 30 minutes.

After 30 minutes, our whole wheat bread dough would look like this.

Bake it in a preheated oven at 200°c (400°f) for 10 minutes.

Lower the temperature to 180°c (360°f) and bake it for 30 minutes. The time required will vary from oven to oven so, do keep an eye on the bread while baking.

While the bread is warm, loosen the edges with the help of a bread knife.

Brush it with butter and keep aside to cool completely. This helps in keeping the bread soft.

Keep the whole wheat bread loaf made using instant dry yeast aside to cool slightly De-mould the whole wheat bread loaf.

Once the bread loaf has cooled completely, cut it into 13 mm. (½“) bread slices.
