curd parsley dressing

    1. In a bowl put 1/2 cup low fat curds (dahi). Curd adds a creamy texture and a mild tanginess to the dressing. This complements the crunch of the vegetables and creates a more well-rounded mouthfeel. Compared to mayonnaise-based dressings, curd offers a lighter and slightly healthier alternative.
    2. Add 1/2 tsp of mustard (rai / sarson) powder. Mustard powder adds a sharp, pungent kick to the dressing. This cuts through the sweetness of the carrots and balances the earthy flavors of broccoli, cauliflower, and cabbage. It creates a more complex and interesting flavor profile in each bite.
    3. Add 1 tbsp finely chopped parsley. Parsley adds a touch of fresh, grassy flavor to the dressing. This brightens up the overall taste profile, especially when combined with the slightly sweet vegetables. It can act as a counterpoint to any bitterness from the broccoli or cabbage.
    4. Add 1 tsp honey or a pinch of sugar. Honey adds a touch of sweetness to the dressing, which helps to balance out the slightly bitter or pungent flavors of the broccoli, cauliflower, and cabbage.
    5. Add 1/2 tsp sea salt.
    6. Mix well.
    7. curd parsley dressing.
making broccoli cauliflower cabbage salad

    1. In a big bowl put 1 cup steamed broccoli florets. Broccoli florets add a slightly grassy, earthy flavor to the salad that complements the sweetness of carrots and the mildness of cauliflower and cabbage. The florets also provide a nice textural contrast with their slight crunch against the softer vegetables.
    2. Add 1 cup blanched cauliflower. Cauliflower adds a milder flavor and a slightly different texture to the salad compared to broccoli. Broccoli florets have a more intense, slightly bitter taste and a firmer bite. Cauliflower provides a more neutral flavor and a softer, floret-like texture that complements the broccoli and other vegetables.

    3. Add 1/2 cup chopped red cabbage. Red cabbage adds a beautiful pop of color to the salad. The bright red contrasts nicely with the white and green of the broccoli, cauliflower, and carrots, making the salad visually appealing.
    4. Add 1/2 cup chopped cabbage. Cabbage provides a satisfying crunch that complements the softer textures of broccoli, cauliflower, and carrots. The combination creates a more interesting and enjoyable mouthfeel in each bite.
    5. Add 1/2 cup finely chopped coloured capsicum. Coloured capsicum adds a vibrant pop of color to the salad. This makes the dish more visually appealing and appetizing. The red, orange, yellow, or green colors of the capsicum can brighten up the otherwise neutral tones of broccoli, cauliflower, cabbage, and carrots.
    6. Add 1/2 cup carrot juliennesCarrots have the nutrient Beta Carotene which is a form of Vitamin A, helps prevent deterioration of the eye as one gets older and prevents night blindness. Carrot is great for the eyes
    7. Add 1/4 cup cherry tomato halves. The sweetness and acidity of cherry tomatoes add a refreshing counterpoint to the slightly bitter and earthy flavors of broccoli, cauliflower, and cabbage. Cherry Tomatoes are extremely rich source of Lycopene. Tomatoes are a powerful antioxidant, super rich in Vitamin C, good for heart
    8. Add the curd parsley dressing.
    9. Toss well.
    10. Serve broccoli, cauliflower and red cabbage salad chilled.
