Ingredients
1 cup soaked and cooked black beans
1 cup cooked quinoa
1/2 cup chopped onions
1/2 cup chopped red capsicum
1/2 cup orange segments
2 tbsp chopped coriander (dhania)

To Be Mixed Into An Orange Vinaigrette Dressing
1/4 cup olive oil
1 tsp lemon juice
1/2 cup readymade orange juice
1/2 tsp dried mixed herbs
1 tsp honey
salt and to taste

    Method
  1. Combine all the ingredients along with the prepared dressing in a deep bowl and toss well.
  2. Serve immediately.

Tarla Dalal    Hi, Heat 1¼ cups of water in a deep non-stick pan, add the quinoa, mix well and cook on a medium flame for 10 to 12 minutes, while stirring occasionally. Transfer it in a deep bowl and keep aside to cool.

Thanks for this healthy recipe and this salad can be had as a meal by itself as Rajma is very filling.
