Munch them at anytime of the day when hunger strikes.
Namkeen or dry jar snacks are a popular food item made during festive occasions like Diwali. Also, they make up for a great tea time snack or tiffin snacks. Chakli or Murukku is a famous savoury snack which you can either prepare by deep-frying or baking.
You can use an assortment of flour and perk it up with ingredients like vegetable puree, sesame seeds, ajwain etc. Looking for a perfect savoury or jar snack to make for your guests or family members to munch on ? Instant homemade baked chakli is definitely a go to. It is one of the most famous Indian snack and also is made in many Indian houses. Chakli is a namkeen which is made with easily available ingredients which are found in every well maintained kitchen.
The method to make baked chakli might look complex but actually it is not. The ingredients used to make the baked chakli would be easily available in any well maintained Indian household. To make baked chalkli, combine rice flour, low-fat curd, sesame seeds, red chilli powder, asafoetida, oil and salt and knead into a semi soft dough. Further, grease the chakli mould and put the mixture into a chakli press and press out round swirls of the dough onto a greased baking tray, working closely from the centre to the outside to the swirls. Bake these chaklis in a pre-heated oven at 180°c (360°f) for 35 to 40 minutes, turning all the chaklis once after 20 minutes. Cool and store in an air-tight container.
Adding 1 tbsp of oil instead of 1 tsp in this baked rice flour chakli reduces the cooking to 25 minutes and also makes the chakli a little softer.
You can also serve baked chalkli as an evening tea snack with a hot cup of Masala Chai. I don’t only make it on occasion of Diwali but I keep making it as my kids not only love this chakli but also they take baked chalklis for their tiffin snack.

To prepare the dough for healthy baked chakli recipe, place a sieve over a deep bowl and add rice flour. Sift the flour to remove the impurities and lumps from the flour.
-
Add ½ cup of low-fat curd.
-
Add sesame seeds to add a crunch to the baked rice chakli. Ajwain, jeera, kalonji, coarsely crushed dhania seeds or black peppercorns can also be added to perk up the flavour of baked chakli.
-
Add chilli powder. You can tweak the quantity as per your taste preferences.
-
Add a pinch of asafoetida.
-
Add 1 tsp of oil. This being a healthy recipe we are relying on less quantity of fat in the form of oil. Normally the addition of a generous amount of fat (moyen) helps in making crispy, crunchy chaklis. Adding 1 tbsp of oil instead of 1 tsp in this recipe reduces the cooking to 25 minutes and also makes the chakli a little softer.
-
Combine all the ingredients and add approx. 1/4 cup of water
-
Mix well and knead into a semi-soft dough using enough water. Taste the dough for seasoning and increase the spice if you want. If the dough is too stiff then chaklis will break when you try to shape them and if the dough is too soft then chaklis will not turn crispy so, make dough carefully.

To prepare baked chakli | low fat chakli |baked rice flour chakli | homemade rice flour chakli | grease a chakli mould and place a star-shaped plate in the chakli press. This will prevent the dough from sticking to the mould.
-
Make a cylindrical roll from the prepared chakli dough and press it into a chakli “press”.
-
Cover it with the lid. Depending on the size of your chakli press you can divide the dough and add, just ensure you fill only till ¾th of the press or else the dough will ooze out and you will face trouble in closing the lid. Before you start piping out the chaklis, preheat the oven.
-
Press out 50 mm. (2”) diameter round swirls of chakli onto a greased baking tray, working closely from the centre to the outside. You can even line a tray with parchment paper and pipe the chaklis.
- If the dough is breaking while forming the chakli, it means there is less moisture. Take the dough out of the chakli press, add a tablespoon of water at a time and knead again.
- If you are not getting a proper shape, it means the dough is too moist then add some flour and knead again.
-
Snap the dough after you have had 3 to 4 spiral rounds. The size of the chakli depends on you. Just ensure that the spirals are not spaced out but an intact coil. If you are facing a lot of trouble while making the spiral coil then simply, make 2 -3 ” long sticks or pipe them in a straight line like a rope. Press out all chaklis like this. You will get around 30 chaklis.
