Ingredients
Main Recipe
2 tsp soybeans
1/4 cup sliced spring onions
1/4 cup sliced capsicum
1/4 cup tofu (bean curd/ soya paneer) cubes
1 cup boiled mixed vegetables
1/2 cup sliced tomatoes
1/4 cup fresh tomato pulp
2 tbsp tomato ketchup
1 tsp vinegar
1 tsp cornflour mixed with 1/2 cup of
1/2 tsp sugar
a pinch of turmeric powder (haldi)
1 tsp chilli powder
1/2 tsp garam masala
1 tsp coriander-cumin seeds (dhania-jeera) powder
salt to taste
2 tbsp finely chopped spring onion greens for the garnish
Method
- Heat the soya oil in a non-stick kadhai, add the spring onions and capsicum and sauté for 2 minutes while stirring continuously.
- Add the tofu, mixed vegetables and tomatoes and sauté for another 2 to 3 minutes.
- Mix together the tomato pulp, tomato ketchup, vinegar, cornflour paste, sugar, turmeric powder, chilli powder, garam masala, coriander-cumin seeds powder and salt in a bowl.
- Add this mixture to the vegetables, mix well and simmer on a slow flame for 5 minutes or till the gravy thickens and coats the vegetables evenly.
- Serve hot garnished with spring onion greens.
