For the batter of Ragi Uttapa for Babies and Toddlers, first combine 2 tbsp of curd with 4 tbsp of water in a bowl. Preferably use curd made from cow’s milk, as that is easier to digest. It is best to consult your pediatrician on the choice of curd.

Mix well using a whisk or spoon and keep aside.

Then take ragi flour in a deep bowl. Also called as nachni flour, it enriches your baby’s diet with calcium and iron.

Add grated carrot to it. These will add a good dose of vitamin A.

Add some grated cabbage to make the batter of Nachni Uttapam for Babies also. This adds on vitamin C. You can also made shredded greens like spinach, fenugreek etc.

Add a pinch of chilli powder. This is totally optional. If you are making these Ragi Uttapams for Babies (below 1 year), chilli powder is best avoided. IF your baby is above 1 year, you can add a pinch of chilli powder to begin your baby getting accustomed to spice in meals.

1/2 tbsp whole jowar (white millet) , washed and drained
1/2 tbsp whole ragi (nachni / red millet) , washed and drained
2 dates (khajur) , deseeded

Combine the whole jowar, whole ragi, dates and ½ cup of water in a pressure cooker, mix well and pressure cook for 3 whistles.

Allow the steam to escape before opening the lid.

Blend in a mixer using ½ cup of water till smooth.

Transfer the mixture into a broad non-stick pan, mix well and cook on a medium flame for 1 to 2 minutes, while stirring continuously.

Cool the jowar, ragi and date porridge for babies slightly and serve lukewarm.

1 tbsp chopped fenugreek (methi) leaves
1 tbsp grated bottle gourd (doodhi / lauki)

Combine all the ingredients in a deep bowl, mix well and knead into a soft dough using enough water.

Divide the dough into 4 equal portions and roll out each portion into a 75 mm. (3") diameter circle using a little jowar flour for rolling.

Heat a non-stick tava (griddle) and cook each roti, using ½ tsp of ghee, till golden brown spots appear on both the sides.

Serve lukewarm with curds.
