Ingredients
For Moong Dal Nimki
1/4 cup yellow moong dal (split yellow gram)
3/4 cup whole wheat flour (gehun ka atta)
2 tsp oil
2 tbsp finely chopped coriander (dhania)
1 tbsp sesame seeds (til)
1 tsp ginger-green chilli paste
3/4 tbsp lemon juice
1/4 tsp turmeric powder (haldi)
salt to taste

Method
For moong dal nimki
- To make moong dal nimki, soak the yellow moong dal in enough water in a deep bowl for 30 minutes. Drain well.
- Combine the yellow moong dal and 2 tbsp water in a mixer and blend to a coarse paste.
- Transfer the paste into a deep bowl, add all the remaining ingredients and knead into a semi-stiff dough without using water.
- Divide and roll the dough into 4 equal portions.
- Roll a portion of the dough into a 175 mm. (7”) diameter thin circle using a little whole wheat flour for rolling.
- Cut the circle vertically into equal size long strips. Repeat step 5 make remaining dough strips.
- Place the strips on a greased baking tray and bake them in a pre-heated oven at 180°c (360°f) for 10 minutes on middle rack.
- Repeat step 7 to bake remaining moong dal nimki strips.
- Remove and cool them completely.
- Serve moong dal nimki or store in an air-tight container and use as required.

This recipes calls for a bit of soaking and planning, but it can be made and stored so I love it... No refined flour and not too much fat but correct spice makes this a true hit.
