We have used a combination of toor dal and masoor dal to give this restaurant style toor dal fry a perfect texture and mouth-feel. The dals are a good source of protein. Serve them to kids, adults and senior citizens to nourish cells of the body. The protein along with fibre from dal also satiates you for a long time thus giving a feeling of satiety. Also B vitamins from dals help in energy metabolism.
To make toor dal fry, combine the dals, 2½ cups of water, turmeric powder, and salt in a pressure cooker, mix well and pressure cook for 2 whistles. Heat the ghee in a deep non-stick kadhai, add the mustard seeds, nigella seeds, cumin seeds and onions and saute for 2-3 minutes. Saute the ginger, garlic and green chillies for 1-2 minutes. Add the kashmiri red chilli, curry leaves and sauté on a medium flame for 2-3 minutes. Add the tomatoes and ¼ cup of water, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally. Add chilli powder and a pinch of asafoetida and cook for about 1 minute. Add the cooked dal mixture and ¼ cup of water, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally. Add the garam masala, mix well and cook for 1-2 minutes. Serve the dal fry with toor dal immediately garnished with coriander.

Ingredients
Dal Fry With Toor Dal
3/4 cup toovar (arhar) dal , washed and drained
1/4 cup masoor (split red lentil) dal , washed , soaked for 2 hours and drained
1/4 tsp turmeric powder (haldi)
salt to taste
2 tbsp ghee
1/2 tsp mustard seeds ( rai / sarson)
1/2 tsp nigella seeds (kalonji)
1/2 tsp cumin seeds (jeera)
1/2 cup finely chopped onion
1 tsp grated ginger (adrak)
1 tsp grated garlic (lehsun)
2 green chilli , finely chopped
1 whole dry Kashmiri red chilli
1/2 cup finely chopped tomato
1/2 tsp red chilli powder
2 pinches asafoetida (hing)
1 tsp dried fenugreek leaves (kasuri methi)
1/4 to 1/2 tsp garam masala
salt to taste
For The Garnish
2 tbsp finely chopped coriander (dhania)
Method
Dal fry with toor dal
- To make dal fry with toor dal, combine the dals, 2½ cups of water, turmeric powder, and salt in a pressure cooker, mix well and pressure cook for 2 whistles.
- Allow the steam to escape before opening the lid and keep aside.
- Heat the ghee in a deep non-stick kadhai, add the mustard seeds, nigella seeds, cumin seeds and onions. Mix well and saute for 2-3 minutes.
- Add the grated ginger, garlic and green chilles and aute for 1-2 minutes.
- Add the kashmiri red chilli, curry leaves and and sauté on a medium flame for 2-3 minutes.
- Add the tomatoes and ¼ cup of water, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
- Add chiili powder and a pinch of hing. Mx well and cook for about 1 minute.
- Add the cooked dal mixture and ¼ cup of water, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
- Add the garam masala, mix well and cook for 1-2 minutes.
- Serve the dal fry with toor dal immediately garnished with coriander.

Clean, wash and soak the masoor dal in a deep bowl. Cover and keep the keep aside for 2 hours.

Drain the water and rinse the the masoor dal.

Take a pressure cooker and add the toor dal do it.

Also add the soaked and drained masoor dal. There are many variations of dal fry available, this one has masoor and toor dal. If you want you can use yellow moong dal as well. Now add approximately 2½ cups of water (you can change this if you like) to cook the the dals for the Dal Fry.

Now add the turmeric powder.

Also add salt to taste.

Mix well and pressure cook for 3 whistles. Let the steam escape naturally before opening the lid and keep aside.

Mix well and sauté on a medium flame for 2 to 3 minutes or till the onions turn translucent.

Then add the garlic as well.

Now add the green chillies for spice.

Mix well and sauté on a medium flame for _ minute or till the raw taste of the garlic, ginger and chillies goes away.

Now add the dry kashmiri red chilli.

Also add the curry leaves. Mix well and sauté for a minute till they start crackling.

Add the tomatoes now. We have to cook them till they lose their raw flavor. If the tomatoes start to burn, you can add approximately ¼ cup of water.

Mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.

Now add the red chilli powder.

Also add a pinch or two of hing. A little hing goes a long way in making a dish taste really good. Hence only add a little bit.

Mix well and cook for __ minutes or till the oil leaves the sides.

Add the cooked dal mixture to the pan.

Also add a little salt. We have already added salt while cooking the dals, so taste the dal and then add accordingly.

If the dal is too thick, add ¼ cup of water to loosen it a little.

Mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.

Now add the garam masala for a smoky taste to Dal fry with toor dal.

Also add a little kasuri methi. Put the kasuri methi in between your palms and crush it lightly before adding to the toor dal fry | restaurant style toor dal fry | toor dal fry with rice | toor dal tadka |. Mix well and cook for 1-2 more minutes. Garnish with coriander.
