Crunchy Salad with Curd Bread Mayonnaise

Here, we have tried to avoid readymade mayonnaise and made an innovative alternative using curds as the main ingredient, flavoured with mustard powder and white pepper powder, and thickened with bread. This is not only healthy but awesomely tasty too! Serve this salad immediately upon tossing, in order to enjoy the exciting range of textures and flavours that it offers.

Ingredients
For The Bread Mayonnaise
2 fresh bread
1/2 cup hung curds (chakka dahi) , made from low fat (99.7% fat-free )
1/2 tbsp olive oil
1/4 tsp white pepper powder
1/2 tsp mustard (rai / sarson) powder
1/4 tsp powdered sugar
salt to taste
Other Ingredients
1 1/2 cups iceberg lettuce , torn into pieces
1 cup cucumber cubes
1 cup apple cubes (unpeeled)
1/4 cup chopped walnuts (akhrot)
Method
- Remove the crust from all the bread slices.
- Combine all the ingredients including the bread slices and blend in a mixer till smooth.
- Refrigerate for atleast 1 hour. Keep aside.
- Combine all the ingredients in a deep bowl and mix well.
- Add the prepared bread mayonnaise and toss well.
- Serve immediately.

Truly crunchy! The veggies and walnuts give a very good mouthfeel... the curd bread mayo perfectly perks up the flavour with the addition of pepper powder and mustard powder... quite filling and a very good option as a healthy snack too.
