  1. Heat the oil in a small non-stick pan, add the onions and sauté on a medium flame for 2 minutes. Remove and keep aside.
  2. In the same small non-stick pan, add the coconut and sauté on a medium flame for 2 minutes. Remove and keep aside.
  3. In the same small non-stick pan, add the coriander seeds, cumin seeds, sesame seeds, star anise and cinnamon and sauté on a medium flame for 1 minute.
  4. Combine all the sautéed ingredients along with the curry leaves and ¼ cup of water in a mixer and blend till smooth. Keep aside.

  1. To make vangi bath, heat the oil in a deep non-stick pan, add the cloves, bayleaf, cardamom and peppercorn and sauté on a medium flame for 30 seconds.
  2. Add the brinjal and sauté on a medium flame for 4 minutes.
  3. Add the prepared paste and 2 tbsp water, mix well and cook on a medium flame for 1 minute, while stirring continuously.
  4. Add the chilli powder, turmeric powder, garlic paste, ginger paste, 5 tbsp of water and salt, mix well and cook on a medium flame for 1 minute.
  5. Add the rice and coriander, mix gently and cook on a medium flame for 2 minutes, while stirring occasionally.
  6. Serve the vangi bath hot.

For the paste

  2. Once the oil is hot, add the onions.
  3. Sauté on a medium flame for 2 minutes or until the onions are soft.
  4. Remove them on a plate and keep aside.
  5. In the same small non-stick pan, add the coconut.
  6. Sauté on a medium flame for 2 minutes or until the coconut is light brown.
  7. Remove on the same plate and keep aside.
  8. In the same broad non-stick pan, add the coriander seeds.
  9. Add cumin seeds.
  10. Add sesame seeds.
  11. Add star anise.
  12. Add cinnamon.
  13. Sauté on a medium flame for 1 minute or until the whole spices are fragrant.
  14. Remove the roasted whole spices in the same plate and cool slightly.
  15. Combine all the sautéed ingredients and transfer to the mixer jar.
  16. Add curry leaves.
  17. Add ¼ cup of water.
  18. Blend in a mixer till smooth. Keep aside. We will now begin making the Maharashtrian style vangi bhath.

How to make Vangi Bath

  1. To prepare Maharashtrian Vangi Bath, heat the oil in a deep non-stick pan.
  2. Once the oil is hot, add the cloves.

  4. Add cardamom.
  5. Add peppercorn and sauté on a medium flame for 30 seconds.
