Ingredients

For Nachni Bhakri
1 cup ragi (nachni / red millet) flour
salt to taste

Method

  1. To make nachni bhakri, combine the nachni flour and salt in a deep bowl, mix well and knead into a soft dough using enough hot water.
  2. Divide the dough into 4 equal portions.
  3. Flatten a portion of dough on a dusted rolling board to make a 150 mm. (6”) diameter circle using your fingers.
  4. Lift the bhakri and invert the roti on a hot non-stick tava (griddle) upside down and cook on a medium flame for 30 seconds.
  5. Sprinkle a little water, turn it over and cook for another 50 seconds or till light brown spots appear on the surface.
  6. Then turn it over onto an open flame and cook on both sides for a few seconds till it puffs up.
  7. Repeat steps 3 to 6 to make 3 more bhakris.
  8. Serve the nachni bhakri immediately.

  1. In a bowl put 1 cup ragi (nachni / red millet) flour.
  2. Add salt to taste (optional ). Maharastrian's don't add salt to their ragi bhakri.
  3. Gradually add enough hot water to make a soft dough. We added 1/2 cup water plus 1 tablespoon.
  4. Knead into a soft dough.

  1. Divide the dough into 4 equal portions.
  2. Dust a rolling board with nachni flour.
  3. Flatten the dough into a circular shape.
  4. Using the palm of your hand press down gently  on the bhakri and roll it in a clockwise direction. 
  5. Roll with the palm of your hand till you get a 6 inch (150 mm ) circle. We need to increase the pressure a bit to increase the diameter of the bhakri.
  6. Heat a non-stick tava (griddle).
  7. Place the rolled bhakri dough upside down on it.
  8. Cook for 30 seconds on medium heat.
  9. Sprinkle water on the top of the entire bhakri.
  10. Flip over and cook the other side for 50 seconds.
  11. Remove bhakri from tava and cook on a high open flame using a chimta. The overcooked side of the bhakri becomes the top part of cooking on open flame.
  12. The bhakri should puff up on the open flame. 
  13. Keep cooking and flipping the bhakri on both side with a chimta. 
  14. Put ragi bhakri in a serving plate.

I made nachni Bhakri after a long time. Every body in house liked it. even kids liked it. My mother in law was so happy, that she ordered extra Nachni flour from the market. Now I will be making it very frequenly.
