Xotic Mutter Bites recipe - How to make Xotic Mutter Bites

Ingredients

For The Stuffing
1 tbsp butter
1 tbsp oil
1 tsp cumin seeds (jeera)
1 tsp ginger (adrak) paste
1 tbsp chopped grene chillies
1 tsp garlic (lehsun) paste
1/2 cup chopped onions
2 tbsp soaked melon seeds (charmagaz)
1 cup boiled and crushed green peas
1/2 boiled and mashed potato
1/2 cup chopped corainder
salt to taste
1/2 tsp turmeric powder (haldi)
2 tsp garam masala
2 tbsp tomato ketchup
2 tbsp grated paneer (cottage cheese)
2 tbsp chopped cashewnuts (kaju)
1 grated processed cheese cube

For The Dough
100 gms plain flour (maida)
1 tbsp ghee
salt to taste
1/2 tsp garlic (lehsun) paste
water to bind the dough

Other Ingredients
oil for deep frying
plain flour (maida) for rolling
Method

For the stuffing:

    For the stuffing:
  1. Heat butter and oil and add the cumin seeds and allow to crackle.
  2. Add the ginger, garlic, green chilly, onion and saute till onion turns pink.
  3. Add melon seeds paste, peas ,potato, coriander and mix well.
  4. Add salt, haldi, garam masala, ketchup, paneer, cashewnuts and saute till it leaves the vessel.
  5. Remove from the flame and add grated cheese and mix well and keep aside.

  1. Mix all the ingredients and add water to make a medium soft dough.

How to proceed

  1. Make small balls of this dough and roll to a puri of medium thickness of 3 inches diameter.
  2. Place 1-1 1/2 tbsp of the stuffing and cover with another puri of the same size.
  3. Seal the edges of the puri using a fork so that the stuffing doesn't come out.
  4. Deep fry these 'exotic mutter bites' in hot oil till golden on a medium flame.Serve hot with green chutney.
