This is not another of those mellow, creamy sandwiches, and definitely not for the soft-hearted! Full of josh, this all-time favourite street food of Mumbai, veg cheese grilled sandwich features an assortment of crunchy and juicy veggies sandwiched between bread slices smeared with butter and peppy green chutney.
A special sandwich masala is the highlight of this Mumbai veg cheese grilled sandwich, as it raises the flavour and aroma to another plane, beyond the realm of ordinary sandwiches! You can use brown or white triangular bread slices to make this yummy sandwich. Both are readily available in the market.
I would like to share some important tips to make the perfect veg cheese grilled sandwich. 1. The big triangular bread slices are ideal for making this roadside cheese grilled sandwich because everything can be assembled nicely without falling out. You can also make use of whole wheat bread, multigrain bread or any other sandwich loaf. 2. Apply ½ tsp of butter on all the 3 bread slices. Ensure the butter is at room temperature so you can spread it easily. 3. Sprinkle ½ cup of cheese evenly over it. We have used processed cheese but, you can also use grated cheddar, mozzarella cheese or cheese slices. 4. Pre-heat the sandwich griller, grease it with 1 tsp of butter, place the prepared vegetable cheese sandwich on it with the buttered side faces upwards.
For Sandwich lovers, this is a 2 layered veg cheese grilled sandwich with the top layer having cucumber, tomatoes, onions and then loaded with grated cheese. I grew up in Mumbai and had this Mumbai veg cheese grilled sandwich at breach candy on a regular basis late at night. We had to stand in long lines to get this famous veg cheese grilled sandwich which is a street food dinner.

For vegetable cheese grilled sandwich- To make vegetable cheese grilled sandwich apply 1½ tsp of butter and 2 tsp of green chutney on 3 bread slices and keep aside.
- Place a slice of bread, with the buttered-chutney side facing upwards, on a clean and dry surface and arrange 8 potato slices over it and sprinkle some sandwich masala and salt evenly over it.
- Arrange 3 capsicum rings evenly over it and place another bread slice over it, with the buttered-chutney side facing upwards.
- Arrange 10 cucumber slices over it and again sprinkle some sandwich masala and salt evenly over it.
- Arrange 6 tomato slices and 3 onion slices over it and again sprinkle some sandwich masala and salt evenly over it.
- Sprinkle ½ cup of cheese evenly over it.
- Cover it with another slice of bread with the buttered-chutney side facing downwards. Spread a little butter on the bread slice and press it lightly.
- Place the prepared sandwich in a greased and pre-heated sandwich griller by turning the sandwich upside down so that the buttered side faces downwards.
- Again spread a little butter on the bread slice and grill it for 3 to 4 minutes or till the sandwich turns golden brown in colour and crisp.
- Cut the vegetable cheese grilled sandwich into 6 pieces using a sharp knife.
- Repeat steps 1 to 10 to make 3 more grilled sandwiches.
- Garnish with ½ cup of cheese on each vegetable cheese grilled sandwich and serve immediately with tomato ketchup and green chutney.

Sprinkle some sandwich masala and salt evenly over it. Prepare a fresh batch of sandwich masala at home using this recipe or you can use mint chutney or coriander mint chutney if you like.

Arrange 3 capsicum rings evenly over it. You can also make use of bell peppers or boiled beetroot to fortify the veg cheese grilled sandwich.

Place another bread slice over it, with the buttered-chutney side facing upwards.

Arrange cucumber slices over it. After slicing, taste the cucumber because sometimes they are bitter, ruining the whole vegetable cheese grilled sandwich taste.
