The patty for this Vegetable Burger is very different, and you will realize that as soon as you take the first bite! The addition of garam masala and ginger, green chilli pastes to the mashed vegetables imparts a tangy twist to the tava-cooked patty, making it a treat to the taste buds.
The effect is further enhanced by a special salad of shredded veggies spruced up with mayonnaise and mustard powder, which accompanies the crisp patties along with standard fittings like veggie slices, lettuce, and so on.
This burger is really a mega mouthful! Serve with Cheesy Wafers and Mango Milkshake .
For the vegetable patty- Lightly mash the vegetables using a potato masher and keep aside.
- Dip the bread slice in water for a few seconds. Squeeze out all the water and crumble the bread.
- Add the all the remaining ingredients and mix well.
- Divide the mixture into 6 equal portions and shape each portion into a 75 mm. (3”) diameter round flat patty.
- Roll each patty in the bread crumbs till they are evenly coated from both the sides.
- Heat the tava (griddle), grease it using a little oil.
- Cook each patty on a medium flame, using a little oil, till they turn golden brown in colour from both the sides. Keep aside.
How to proceed- Divide the coleslaw into 6 equal portions and keep aside.
- Cut each burger bun horizontally into two. Apply butter on the insides of each half of the burger bun and toast them lightly on a hot tava (griddle). Keep aside.
- Place the lower half of the bun on a clean, dry surface and spread 1 tbsp of tomato ketchup evenly over it.
- Place an iceberg lettuce leaf, 1 patty, 1 portion of the coleslaw, 2 tomato slices and 1 onion slice and sprinkle a little salt and pepper over it.
- Cover with an upper half of the bun and press it lightly.
- Repeat steps 3 to 5 to make 5 more burgers.
- Serve immediately.

Vegetable Burgers recipe with step by step photos
- To make the mixture for the mixed vegetable patty, we will first take chopped and boiled mixed vegetables in a deep bowl. We have used carrots, french beans, cauliflower and green peas.
- Lightly mash the vegetables using a potato masher.
- Dip the bread slice lightly in water.
- Place the bread slice between your palms, press and squeeze out all the water from it. Crumble and add to the mashed mix vegetables.
- Add green chilli paste and ginger paste for the much needed spice in the mixture.
- Add lemon juice.
- Add garam masala. A hint of Indian flavour to perk up the patty.
- Then add the boiled, peeled and mashed potatoes and add salt to taste.
- Combine all the ingredients and mix well.
- Take a portion of the mix vegetable patty mixture.
- And shape into a 75 mm. (3”) diameter round flat patty.
- Repeat to make more patties with the remaining mixture. We have made 6 patties, you can make more or less as per the size of your burger buns.
- Roll each patty in the bread crumbs till they are evenly coated from both the sides.
- Heat the tava (griddle), grease it using a little oil.
- Place 3 patties on it, drizzle some oil over the patties and cook on a medium flame.
- Then flip all the patties and cook on the other side. Drizzle some oil on the sides of the patty as well and cook till crisp and golden brown from both the sides.
- Remove and transfer to a plate. Cook the remaining patty the same way. You can shape them in small cutlets or oblong shape and serve along with a dip as a party starter.
- Take shredded cabbage in a bowl.
- Add the grated carrots.
- Then add the mayonnaise.
- Add mustard powder and salt to taste.
- Mix well and the coleslaw is ready. Keep aside.
- Take the burger bun and cut horizontally into two.
- Apply butter on the insides of each half of the burger bun.
- Heat a tava (griddle) and place the cut bun with buttered side down and toast them lightly.
- Place the toasted buns on a clean dry surface.
- On the lower half of the bun spread 1 tbsp of tomato ketchup evenly over it.
- Place an iceberg lettuce leaf over it. A quick tip to keep it crispy is to dip it in cold water and then pat dry and place it over the bun.
- Place the patty over it.
- Spread some of the prepared coleslaw over it.
- Place 2 tomato slices over it.
- Place a onion slice over it.Sprinkle salt and freshly ground pepper over it.
- Cover with an upper half of the bun and press it lightly.
- Similarly assemble the remaining burger buns.
- You can serve vegetable burger with french fries and coke, potato wafers and coleslaw. You can even use mini burger buns to make vegetable burger sliders.
