Ingredients
2 cups mixed sprouts (moong , matki , chana , chawli etc.)
salt to taste
2 tbsp oil
1 tsp cumin seeds (jeera)
2 tsp finely chopped garlic (lehsun)
1 tsp finely chopped green chillies
1/2 cup finely chopped onions
3/4 cup finely chopped tomatoes
1 tsp chilli powder
1/4 tsp turmeric powder (haldi)
1/2 cup boiled and peeled potato cubes
2 tsp lemon juice
3 tbsp finely chopped coriander (dhania)
Method
    Method
  1. Combine the mixed sprouts, salt and 1½ cups of water in a pressure cooker and pressure cook for 3 whistles.
  2. Allow the steam to escape before opening the lid. Keep the mixed sprouts aside without draining the water.
  3. Heat the oil in a non-stick kadhai and add the cumin seeds.
  4. When the seeds crackle, add the garlic and green chillies and sauté on a medium flame or a few seconds.
  5. Add the onions and sauté on a medium flame for 1 to 2 minutes.
  6. Add the tomatoes and 1 tbsp of water and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
  7. Add the chilli powder, turmeric powder and salt, mix well and cook on a medium flame for another 1 minute.
  8. Add the potatoes, mixed sprouts (along with the water), lemon juice and coriander, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
  9. Serve hot.
