  1. To make spinach and chickpea soup, heat the olive oil in a deep non-stick kadhai, add the garlic and onions.
  2. And sauté on a medium flame for 2 minutes.
  3. Add the carrots and celery. Sauté on a medium flame for 3 minutes.
  4. Add the kabuli chana, spinach, vegetable stock and chilli powder and cook on a medium flame for 6 minutes.
  5. Pulse the soup a few times with a hand blender to achieve a slightly blended, creamy texture.
  6. Add lemon juice, salt and pepper mix well and cook for 1 minute.
  7. Serve spinach and chickpea soup immediately.
