Thought the only dessert you could make with apples is apple pie? Well think again! This Mughlai recipe of apples cooked with sugar, milk and raisins and flavoured with saffron, cardamom and rose water is a treat for all your senses. Rubbing the saffron with your fingertips while dissolving it in the warm water helps release more flavour and a lovely colour from it. You could also put in a few small pieces of diced apple along with the grated apple for some extra body.

Method

  1. Combine the saffron and 1 tbsp of warm water in a bowl and mix well. Keep aside.
  2. Combine the apples, ¼ cup of sugar and 2 tbsp of water in a deep pan, mix well and cook on a medium flame for 6 to 8 minutes, while stirring occasionally. Keep aside.
  3. Boil the milk in a deep non-stick pan, cook on a medium flame for 25 to 30 minutes or till the milk reduces to half its quantity, while scrapping the sides occasionally.
  4. Add the remaining ¼ cup of sugar and raisins, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  5. Add the cardamom powder, saffron-water mixture, rose water and apple-sugar mixture and mix well.
  6. Remove from the flame and keep aside to cool.
  7. Once cooled, refrigerate for at least 1 hour.
  8. Serve chilled garnished with cardamom powder.

    1. To make seb ki kheer recipe | apple kheer | apple kheer for vrat | boil 5 cups of full-fat milk in a deep non-stick pan. The high fat content in whole milk contributes significantly to the creamy and luscious texture of the kheer. It creates a smooth, velvety mouthfeel that is characteristic of this dessert.

    2. Cook it on a medium flame for 25 to 30 minutes or till the milk reduces to half its quantity, while scrapping the sides occasionally. 

    3. Meanwhile, heat 2 tbsp ghee in a small non-stick pan. Ghee imparts a distinct, nutty aroma and a rich, buttery flavor to the kheer. It elevates the taste profile, making it more indulgent and satisfying.

    4. Add 1 1/2 cups thickly grated apples ,peeled. Thickly grated apple provides a pleasant, soft bite to the kheer. It's not mushy or dissolves completely, offering a contrast to the creamy milk base.

    5. Cook them on a medium flame for 8 to 10 minutes, until the moisture evaporates.

    6. Add 1/4 cup chopped mixed nuts ( almonds, cashews, pista).

    7. Sauté on a medium flame for 2 minutes. Keep aside.

    8. Once the milk is reduced, add ½ cup sugar. Sugar adds the necessary sweetness to the kheer, balancing the tartness of the apples and the richness of the milk.

    9. Add a few saffron (kesar) strands. Saffron imparts a beautiful, vibrant golden hue to the kheer, making it visually appealing.

    10. Add the sauteed apple-nuts mixture.

    11. Add ½ tsp cardamom (elaichi) powder. Cardamom adds a warm, slightly sweet, and aromatic note to the kheer. It complements the sweetness of the apples and sugar, creating a more complex and well-rounded flavor profile.

    12. Mix well and cook on a medium flame for 4 to 5 minutes, while stirring occasionally. 

    13. Remove from the flame and keep aside to cool.

    14. Once cooled, refrigerate for at least 1 hour.

pro tips to make seb ki kheer

 

    1. To prevent curdling, ensure the cooked apples are at room temperature before adding them to the warm milk.

    2. You can add little rose water or kewra water to enhance the flavour of the kheer.

    3. Instead of sugar you can use jaggery or condensed milk to make this recipe.

Hi, I made this the first time and it came out excellent. Last week I made it twice on the same day and it curdled both the times once i added the apples. Please please let me know where I might be going wrong since I love this recipe. Thx

Thank you for your review. There can be 2 reasons why the kheer must have curdled- 1. your milk must have been spoilt 2. your apples must be old. We re-tried the recipe after your comment and it was perfect, we have also standarized the recipe more by writing the exact timings for each step... Hope you re make it and it turns out great. Its a great recipe :) A welcome change from the regular rice kheer. I don't like very sweet kheer and thus reduced the quantity of sugar.
