Main Ingredients
1 1/2 cups thickly grated apples ,peeled
5 cups full fat milk
1/2 cup sugar
a few saffron (kesar) strands
2 tbsp ghee
1/4 cup chopped mixed nuts ( almonds, cashews, pista)
1/2 tsp cardamom (elaichi) powder
Method
- Combine the saffron and 1 tbsp of warm water in a bowl and mix well. Keep aside.
- Combine the apples, ¼ cup of sugar and 2 tbsp of water in a deep pan, mix well and cook on a medium flame for 6 to 8 minutes, while stirring occasionally. Keep aside.
- Boil the milk in a deep non-stick pan, cook on a medium flame for 25 to 30 minutes or till the milk reduces to half its quantity, while scrapping the sides occasionally.
- Add the remaining ¼ cup of sugar and raisins, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
- Add the cardamom powder, saffron-water mixture, rose water and apple-sugar mixture and mix well.
- Remove from the flame and keep aside to cool.
- Once cooled, refrigerate for at least 1 hour.
- Serve chilled garnished with cardamom powder.

Hi, I made this the first time and it came out excellent. Last week I made it twice on the same day and it curdled both the times once i added the apples. Please please let me know where I might be going wrong since I love this recipe. Thx

Thank you for your review. There can be 2 reasons why the kheer must have curdled- 1. your milk must have been spoilt 2. your apples must be old. We re-tried the recipe after your comment and it was perfect, we have also standarized the recipe more by writing the exact timings for each step... Hope you re make it and it turns out great. Its a great recipe :) A welcome change from the regular rice kheer. I don't like very sweet kheer and thus reduced the quantity of sugar.
