Here is a Punjabi boondi raita that includes the fun of having your favourite namkeen too. When you have boondi on hand, it is extremely quick and easy to make. Just mix in chilled curds, spice powders and boondi, garnish with coriander and your chatpata boondi raita is ready to be served.
All the spices are carefully added in the right proportions to make chatpata boondi raita. While jeera powder is a must in this raita, chilli powder can be replaced with green chilli paste. And do not miss out on the addition of the fresh herb – coriander for that ultimate Indian touch.
You can serve this Punjabi boondi raita immediately if you want to enjoy the crunch of the boondi, else refrigerate for a while. If you like soft Punjabi boondi raita, then soak the boondi in enough water for 10 to 15 minutes, squeeze extra water and use to make the raita. 3. Ensure that you do not squeeze it too much, else the boondi might turn dry. 4. Use fresh curd for best taste and flavour.

Add the salt to taste. You can skip adding salt if you are making Meetha (sweet) boondi.

Add about ¾ cup of water. Add the water little by little to prevent the formation of lumps. Add about ¼ cup initially.

Mix it well with the help of a whisk. Break all the lumps.

Now add the remaining amount of water and mix well.

Add ½ tbsp of oil. It makes the boondis crispy and also helps to pour the batter smoothly into the hot oil for frying.

The batter should be of a pouring consistency. It should be slightly thinner than a dosa batter.

Heat the oil for frying the boondi in a deep non stick pan. Pour about ¼ cup of the boondi batter into a large and round perforated spoon(boondi jhara) The holes in the Jhara should not be too large. Large holes will ruin the shape and size of the boondi.

Fry the boondi till they turn golden.

Use another jhara (perforated spoon) to drain the boondi from them oil.

Place the boondis on an absorbant paper to get rid of the excess oil.

Repeat the steps 8 to 11 to make more boondis with the remaining batter. You will get around 3.50 cups of boondi. Store the boondi in an air tight container.

Alternatively, refrigerate the raita for 15 minutes before you serve.

To make Boondi Raita with cucumber take about 1 cup of grated cucumber. Squeeze out the excess water using your palms and place it on a clean and dry plate. Keep aside.

Take a deep bowl and add the curd into it. Beat it up with the help of a whisk.

Add approx. ¼ cup of water to thin the dahi down. Mix well with the help of a whisk.

Add the grated and squeezed cucumber.

Add the salt to taste to Boondi Raita with cucumber and mix well. Do not ad salt if your boondis are salty. Always taste the raita before you add the salt.

Serve the Boondi Raita with cucumber immediately.
