Recipe Description for Paneer Bhurji Panini, Cottage Cheese Panini
- Heat the oil and butter in a broad non-stick pan, add the garlic, green chillies and onions and sauté on a medium flame for 1 to 2 minutes.
- Add the capsicum and tomatoes, mix well and cook on a medium flame for 2 to 3 minutes.
- Add the chilli powder, garam masala, turmeric powder, pav bhaji masala and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
- Switch off the flame; add the paneer and coriander, mix well and cook on a medium flame for 2 minutes, while stirring occasionally. Keep aside.
- To make {span class="bold1"}paneer bhurji panini{/span}, divide the paneer bhurji into 3 equal portions. Keep aside.
- Cut each panini bread or hot dog roll horizontally using a sharp knife.
- Take 2 pieces of the panini, on a clean dry surface. Apply 1 tsp of melted butter on each side.
- Apply 1 tsp of green chutney on each side.
- Put a portion of the paneer bhurji on the lower halve and spread it evenly.
- Sprinkle 1 tbsp of spring onion greens evenly over it.
- Close the bread and apply ½ tsp of melted butter on top of the bread and grill in a greased pre-heated sandwich griller for 5 minutes till they turn crispy and brown from both the sides.
- Repeat steps 3 to 7 to make 2 more paninis.
- Cut each sandwich diagonally into 2 equal pieces.
- Serve the {span class="bold1"}paneer bhurji panini{/span} immediately.
