Method- Combine all the ingredients in a deep bowl and knead into a soft dough using enough water.
- Divide the dough into 10 equal portions and roll out each portion into a 150 mm. (6") diameter circle using a little whole wheat flour for rolling.
- Heat a non-stick tava (griddle) and cook each khakhra on a slow flame till pink spots appear on both the sides.
- Grease the khakhra with 1/4 tsp oil on each side and continue cooking it on a slow flame, while pressing with a folded muslin cloth or a khakhra press, till it turns crisp and brown from both the sides.
- Cool completely and serve or store in an air-tight container and use as required.

In a deep bowl put 1/2 cup quick cooking rolled oats.

Add 1/2 cup finely chopped fenugreek (methi) leaves.

Add 1/4 cup jowar (white millet) flour.

Add 1/4 cup ragi (nachni / red millet) flour.

Add 1/4 cup whole wheat flour (gehun ka atta).

Add 1/4 tsp turmeric powder (haldi).

Add 1/4 tsp green chilli paste.

Add 1/4 tsp ginger (adrak) paste.

Add 1/4 tsp garlic (lehsun) paste.

Add 1 tsp oil.

Add salt to taste. We added 1/2 tsp salt.

Gradullay add enough water to make a soft dough. We added 1/4 cup water. We later added 2 tablespoons more water.

Knead into a soft dough.

Sprinkle a little whole wheat flour (gehun ka atta) on the rolling surface. Flatten the dough between your palms and place on rolling board and top with flour.

Roll out each portion into a 150 mm. (6") diameter circle using a little whole wheat flour for rolling.

Heat a non-stick tava (griddle).

Place the rolled out Khakhra dough on it.

Grease with ¼ tsp of oil or ghee.

Flip over.

Grease the other side with ¼ tsp of oil or ghee.

Cook on one side for 30 to 45 seconds or until bubbles (blisters) appear. Cook on slow flame. High flame will burn the khakhra.

With the help of a khakhra press or folded muslin cloth, press the khakhra from all the sides and cook over a slow flame till it is crisp.

Flip and cook the Khakhra on the other side. Cook on slow flame to get a crisp khakhra. You will have to keep cooking the khakhra and flipping it till done.
