Roll out a portion of the dough into a 125 mm. (5") diameter thin circle using a little whole wheat flour for rolling. Heat a non-stick tava (griddle) and cook it on a slow flame till pink spots appear on both the sides. Continue cooking the khakhra on a slow flame, while pressing with a folded muslin cloth or a khakhra press, till it turns crisp and brown from both the sides. Repeat steps 4 to 6 to make 9 more khakhras. Cool and store in an air-tight container.

In a mixer put 1/2 cup finely chopped mint leaves (phudina).

Add 2 tsp chopped green chillies.

Add ¼ cup of water.

Blend to a smooth paste. Keep aside.

In a bowl put 1 cup whole wheat flour (gehun ka atta).

Add the pudina paste.

Add 1/2 tsp roasted and coarsely crushed cumin seeds (jeera).

Add 1 tsp oil.

Add salt to taste. We added 1/2 tsp salt.

Add enough water to make a soft dough. We added 3 tbls water. You will need very little water.

Knead into a soft dough.

Divide the dough into 10 equal portions.

Sprinkle a little whole wheat flour (gehun ka atta) on the rolling surface. Flatten the dough between your palms and place on rolling board and top with flour.

As you roll the dough, you will need to rotate it and sprinkle whole wheat flour on it as bajra and ragi make it sticky.

Roll out a portion of the dough into a 125 mm. (5") diameter thin circle using a little whole wheat flour for rolling. Roll out as thinly as possible.

Heat a non-stick tava (griddle) and grease it with oil or ghee.

Place the rolled out Khakhra dough on it.

Cook on one side for 30 to 45 seconds or until bubbles (blisters) appear. Cook on slow flame. High flame will burn the khakhra.

Grease with ¼ tsp of oil or ghee.

Flip and cook the Khakhra on the other side. Cook on slow flame to get a crisp khakhra.

With the help of a khakhra press or folded muslin cloth, press the khakhra from all the sides and cook over a slow flame till it is crisp.

Remember to cook the edges of the khakhra by applying pressure with the khakhra press. It takes a total time of about 3 minutes to cook one khakhra.

You will have to keep cooking the khakhra and flipping it till done.

Heat the khakhra press till hot and place the rolled dough on it.

Close the lid and cook for 10 seconds. We want it to be cooked very lightly.

Cook till blisters appear.

Grease the khakhra with a little oil.

Cook and keep flipping 4 to 5 times. Or else the khakhra will get burnt and give a bitter taste. To make khakhra in the press is easier as it cooks evenly from all the sides and is easier.

Transfer to a serving plate.

Remember to cook the khakhra on a slow flame only and also ensure to cook the edges well.
