Can you imagine biscuits that taste as exciting as any of our desi delicacies like cutlets or pav bhaji? Well, here is a creation that will just about fulfill that dream! Salted biscuits with a topping of tomatoes, onions and mixed vegetables sautéed in butter and perked up with tomato ketchup and coriander, is sure to be quite interesting to the palate. One thing to keep in mind is that you can keep the topping ready, but should assemble the Mixed Vegetable Topping on Salted Biscuits just before serving.

Method

  1. Heat the butter in a broad non-stick pan, add the onions and green chillies and sauté on a medium flame for 1 minute.
  2. Add the tomatoes, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  3. Add the boiled mixed vegetables, tomato ketchup, coriander, chilli powder and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  4. Put a little mixture on each salted biscuit and sprinkle ½ tsp of cheese evenly over it.
  5. Serve immediately.

Wow... It's such a simple recipe.. I made it for my kids and they just loved it.. The spicy and crunchy combination is superb! It makes a good filling snack for kids...
