Ingredients

Mixed Sprouts and Barley Soup
1 cup boiled mixed sprouts
1/4 barley (jau)
2 tsp olive oil or oil
1/4 cup finely chopped onions
1 tsp green chilli paste
1 tsp garlic (lehsun) paste
1/4 cup finely chopped carrot
1/4 cup finely chopped cabbage
salt to taste
3 cups basic vegetable stock
Method

For mixed sprouts and barley soup

  1. To make mixed sprouts and barley soup, place the barley in a bowl of water. To remove the dirt wash and rinse the barley a couple of times till the water is clean and clear.
  2. Soak the clean barley in water for 3 hours or overnight. Drain the soaked barley.
  3. Boil 3 cups of water in a deep non-stick pan. Add the soaked and drained barley.
  4. Cook on a medium flame for 10 minutes, while stirring occasionally. Strain and keep aside.
  5. Heat the olive oil or oil in a deep non-stick pan, add the onions, green chilli paste and garlic paste and sauté on a medium flame for 1 to 2 minutes.
  6. Add the carrots and cabbage and sauté on a medium flame for 2 to 3 minutes.
  7. Add the basic vegetable stock, boiled mixed sprouts, cooked barley and salt. Mix well and bring to a boil, while stirring occasionally.
  8. Cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
