To make bajra urad dal uttapam, soak the whole bajra in enough water in a deep bowl for 8 hours. Drain well. Combine the bajra with enough water in a pressure cooker and pressure cook for 5 whistles. Allow the steam to escape before opening the lid. Drain and keep aside. Wash and soak the rice and urad dal separately in a bowl for 3 to 4 hours. Drain well. Combine the rice and urad dal with ¾ cup of water and blend in a mixer to a smooth paste to get a batter of thick pouring consistency. Transfer the batter into a deep bowl, add the cooked bajra, green chilli paste, salt and ¼ cup of water and mix well. Heat and grease a mini non-stick uttapa pan using ¼ tsp of oil. Pour 2 tbsp of batter in each uttapa mould to make a 75 mm. (3") diameter round circle. Sprinkle ½ tbsp of onions and ½ tbsp of capsicum and sprinkle a little chilli powder over each uttapa. Cook all the uttapas, using 1 tsp of oil, till they turn golden brown in colour from both the sides. Repeat steps 8 to 10 to make more mini uttapas. Serve immediately with healthy green chutney.

Soaking, pressure cooking the whole bajra

  4. Cover with a lid and soak for 8 hours or overnight.

  6. Clean the water a few times to remove the dirt.  
  7. Drain the water using a sieve.
  8. In a pressure cooker add the soaked whole bajra. 
  9. Add 1/2 cup of water. 
  10. Add salt to taste. 
  11. Mix well.
  12. Pressure cook for 5 whistles. 
  13. Allow the steam to escape before opening the lid. This is what it looks like. 
  14. Drain the water. Keep the cooked whole bajra aside. 

Soaking the urad dal

  1. This is what urad dal looks like.
  2. Clean urad dal multiple times in water.
  3. This is clean urad dal.
  4. Soak for 3 to 4 hours. Cover with a lid.
  5. Strain the urad dal with a sieve.
  6. Keep aside in a bowl.

Soaking the rice

  1. This is what rice looks like.
  2. Wash rice in water to remove dirt.
  3. The rice is now clean.
  4. Cover and soak rice for 3 to 4 hours.
  5. Strain the water out using a sieve.
  6. Keep soaked rice in a bowl.

Making the batter for rice bajra urad dal uttapam

  1. In a mixer, put the soaked rice.
  2. Add the soaked urad dal.
  3. Add ¾ cup of water.
  4. Blend in a mixer to a smooth paste to get a batter of thick pouring consistency.
  5. Transfer the batter into a deep bowl. 
  6. Add 1 tsp green chilli paste.
  7. Add salt to taste.
  8. Add  ¼ cup of water.
  9. Add the cooked bajra
  10. Mix well.

Cooking the rice bajra urad dal uttapam

  1. To cook the bajra urad dal uttapam | rice bajra urad dal uttapam | heat and grease a mini non-stick uttapa pan using ¼ tsp of oil.
  2. Pour 2 tbsp of batter in each uttapa mould to make a 75 mm. (3") diameter round circle.
  3. Sprinkle ½ tbsp of onions. I think you should increase the onions you out as that gives the bajra urad dal uttapams | rice bajra urad dal uttapam | a good crunch.
  4. ½ tbsp of capsicum
  5. Sprinkle a little chilli powder over each uttapa. This is optional as some don't like their uttapam spicy. A good idea is to add a bit of chopped tomatoes at this stage.
  6. Cook all the uttapas, using 1 tsp of oil, till they turn golden brown in colour. I have flipped a few to see how the cooking is going.
  7. Now flip all the bajra urad dal uttapams | rice bajra urad dal uttapam | over.
  8. Cook and flip over and your bajra urad dal uttapams | rice bajra urad dal uttapam | is ready. You will have to repeat the process again as we are making another batch of uttapam.

Whole grain like bajra used to make uttapas….soaking and cooking of bajra properly is very important or else you may get a raw taste….whole grains are always better than the processed one's as their fibre is intact.
