For the rajma topping- Mash the rajma coarsely using a potato masher. Keep aside.
- Heat the oil and butter in a broad non-stick pan, add the onions and sauté on a medium flame for 1 minute.
- Add the capsicum and sauté on a medium flame for 1 minute.
- Add the rajma, chilli powder, tomato ketchup and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally. Keep aside.

- Top it with ¼ cup corn, ¼ cup of tomatoes and ¼ cup of cheese evenly over each pizza base.

For the rajma topping of Mexican Rajma Corn Pizza, wash and soak the rajma overnight. Then, drain and rinse the kidney beans. Add soaked beans and water to a pressure cooker. Pressure cook on a medium flame for 15-20 minutes. Drain and mash the rajma coarsely using a potato masher. Keep aside.
- Heat the oil and butter in a broad non-stick pan. By mixing oil and butter together, you end up with a mixture that has the flavour of butter but allows you to sauté at higher temperatures without burning the food.
- Add the onions and sauté on a medium flame for 1 minute.
- Add the capsicum and sauté on a medium flame for 1 minute.
- Add the rajma.
- Add the chili powder. You can substitute it with chili flakes.
- Add tomato ketchup and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally. Tomato ketchup gives a pleasant tangy flavor and also, juiciness to the rajma topping. Keep aside.
- Arrange the pizza base on a clean, dry surface. Here we have used ready-made pizza base, you can refer to our recipe on How To Make Basic Pizza Base or Whole Wheat Pizza Base and make pizza base at home easily.
- Spread half of the rajma topping on the pizza base and spread it evenly. Since we have added ketchup to the topping, it is quite moist, if you find it dry then you can apply green chili sauce or pizza sauce over the base.
- Top it with ¼ cup corn. Sweet corn kernels are widely used in Mexican cuisine.
- Now top with ¼ cup of tomatoes. You can also use sliced olives and jalapenos if you like.
- Finally, sprinkle ¼ cup of cheese evenly over each pizza base. Be generous with the amount of cheese you put.
- Bake in a pre-heated oven at 200°C (400°F) for 12 minutes or till the pizza turns crisp and the cheese melts. For people who do not have an oven, quickly heat a non-stick pan with 1 tsp of butter, place the pizza on it, cover with a lid and cook on a slow flame till it turns crispy.
