For kesari bhaat- To make kesari bhaat recipe, combine 1/2 cup hot water, saffron strands and a pinch of saffron colour in a small bowl.
- Mix well and keep aside to soak it for 30 minutes.
- Heat half quantity of ghee in a deep pan, add raisins and cashews. Sauté on a medium flame for a minute.
- Add rava, mix well and cook on a medium flame for 2 to 3 minutes.
- Add sugar and cook on a medium flame for 2 to 3 minutes until the sugar melts, while stirring continuously.
- Add the soaked saffron mixture and mix well. Add 2 cups of hot water. Keep mixing and cook on a medium flame for 3 to 4 minutes, while stirring continuously.
- Once the semolina is perfectly cooked, add cardamom powder and the remaining ghee. Mix well and cook further for 1 to 2 minutes.
