A true energy booster, the Grapefruit, Coconut and Peanut Salad is a tongue-tickling treat as well. The sweet and sour flavour of grapefruit is well balanced by mellow coconut and crunchy peanuts, making this a wonderful snack to munch on. The best part is that it stays fresh for more than six hours when refrigerated in an airtight container. So, you can prepare this and keep it handy, to quickly answer hunger pangs. The healthy good fat in this snack keeps your energy levels high for a long time, while the low glycemic index grapefruit keeps you satiated for long without raising your blood sugar levels.

When grape fruit is in season, every evening at work i have this healthy salad. Grape fruit has low glycemic index and has a lovely sweet and sour taste. Peanuts have the right and healthy fat with protein, while coconut is always good for your health. You will stay fit and lean by having this salad.
