Here is a gluten free jowar chocolate sponge cake made for Indian’s where we have replaced maida and wheat based products with jowar flour. This gluten free jowar chocolate sponge cake is perfect for those suffering from wheat allergy, celiac or gluten intolerance.

For Gluten Free Jowar Chocolate Sponge Cake

Method
Handy tip:
  1. You can grind the sugar in a mixer to get powdered sugar.

  1. Sieve the jowar flour, cocoa powder and baking powder together and keep aside.
  2. Combine the curds, milk, powdered sugar, melted butter, vanilla essence and whisk well.
  3. Add the prepared sieved jowar flour-cocoa mixture and 2 tbsp of water and fold with help of a spatula.
  4. The batter should be of dropping consistency.
  5. Grease the cake tin with butter on all the sides.
  6. Dust with jowar flour and sift to ensure uniform distribution of the flour. Shake and tap the tin to remove the excess flour.
  7. Pour the prepared cake batter into a greased and dusted 175 mm. (7”) diameter tin and spread it evenly.
  8. Bake in a pre-heated oven at 180°c (360°f) for 50 to 55 minutes or till done.
  9. The cake is ready when it leaves the sides of the tin and is springy to touch.
  10. When ready, remove from the oven, invert the tin over a plate and tap sharply to unmould the sponge.
  11. Serve immediately.
Variation: chocolate cupcakes
  1. The batter made at step 4, can be poured into small paper cups and put in a microwave on high for 30 seconds. Remove from the microwave, cool slightly and serve.

Ma''am, thank you so much for the recipe. It''s the best of all gluten free recipes for cakes I have tried so far and it''s so simple to make!. The only addition I did was mixed 2 Tbsps of flax seed powder to about 5 Tbsps of water, refrigerated it for about 15 mins and added it to the wet ingredients. Given mine is a microwave/oven combo, I preheated it to about 150 degrees for 10 mins and baked for about 40 mins

This is an absolute stunner. I have IBS and am always looking for non wheat recipes. This cake is firmer than using ragi flour. I used 5 tbsp of hershey''s cocoa, 3 tbsp coffee decoction instead of water, and 1/2 cup powdered jaggery 2 tbsp powdered sugar. Also 1/4 cup walnuts. The cake does not rise, not a problem..took about 60 min.Lovely texture, delicious! Simple to make as.well. One request- share the weight of the flour used, as cup sizes vary Thank you so much. Have tried this cake twice and ita just supppppper! it''s so easy n yum. only thing I changed was that I used 3/4 cup organic jaggery powder instead of sugar and 1 TSP of coffee powder. tastes heavenly n my kids love it.
