To make fried arbi, deep fry arbi till they turn golden brown. Heat the oil in a broad non-stick pan, add the carom seeds and mustard seeds. When the seeds crackle, add the fried arbi pieces, turmeric powder, chilli powder, coriander powder, lemon juice and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Serve fried arbi.

While some might prefer to directly sauté the cooked arbi, it turns out best when deep-fried first in sukhi Rajasthani arbi fry, so go for this fool-proof method.

For fried arbi
  1. To make fried arbi, heat the oil for deep-frying in a deep non-stick kadhai and deep-fry the arbi slices, a few at a time on a medium flame, till they turn golden brown in colour from all the sides.
  2. Drain on an absorbent paper and keep aside.
  3. Heat the oil in a broad non-stick pan, add the carom seeds and mustard seeds.
  4. When the seeds crackle, add the fried arbi pieces, turmeric powder, chilli powder, coriander powder, lemon juice and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  5. Serve the fried arbi immediately.
Handy tip:
  1. Grease your hands generously with oil before you start to peel or cut the colocasia, or you will end up with sticky, dirty fingers!

    7. Add 1 tsp chilli powder.
    8. Add 1 tsp coriander (dhania) powder.
    9. Add 1 tsp lemon juice.
    10. Add salt to taste. We added 1/3rd tsp salt. 
    11. Mix well.
    12. Cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
