For rajma saagwala
  1. To make rajma saagwala, heat the oil and add the cumin seeds. When they crackle, add the green chillies, ginger, garlic and onions and sauté for 4 to 5 minutes.
  2. Add the amaranth leaves, rajma, turmeric powder and salt, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
  3. Serve the rajma saagwala hot with parathas.

    1. In a deep bowl, add 1 cup rajma (kidney beans), soaked.
    2. Add enough water.
    3. Cover with a lid and soak it overnight.
    4. This is how it looks after soaking.
    5. Drain well.
    6. Transfer the soaked rajma in the pressure cooker.
    7. Add salt.
    8. Add enough water.
    9. Pressure cook for 3 whistles.
    10. Drain well.

    3. When they crackle, add 1 ½ tsp finelly chopped green chillies

    7. Sauté on medium flame for 4 to 5 minutes.

    10. Add ¼ tsp turmeric powder (haldi).
    11. Add salt to taste.
    12. Mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
