Heat the oil in a broad non-stick pan, add the garlic, ginger and green chillies and sauté on a medium flame for a few seconds. Add the spring onion whites and greens and sauté on a medium flame for a few seconds. Add the schezuan sauce, deep-fried corn and a little salt, mix well and toss on a medium flame for 1 minute. Serve immediately.

This one is a winner......came out very well . I made it without the Schezwan sauce. I added some chilli powder instead.

I tried this receipe..it came out well..I had a query to ask.. In the final stages of mixing the sauted veggies with the deep fried golden corn kernels,the crunchiness of corn is lost ... How is possible way to hold on to the crunchy corns ?

Tarla Dalal    Hi Pooja, Toss the corns only before serving. Also, when you fry the corns , drain them completely on an absorbent paper so, no excess oil remains which might turn them soggy.
