For eggless chocolate chip muffins- To make eggless chocolate chip muffins, combine milk and lemon juice, mix well and keep aside.
- In a small bowl, add chocolate chips and ½ tsp plain flour, mix well and keep aside.
- In a deep bowl sieve plain flour, baking powder and baking soda.
- In another bowl, combine the melted butter, powdered sugar, curd, milk-mixture and vanilla extract. Whisk well till no lumps remain.
- Add the flour mixture into the wet ingredients, mix well using a whisk to make a batter consistency.
- Add the plain flour coated chocolate chips and fold in gently into the batter.
- Line the cupcake tray using cupcake liners. Pour 9 equal portions of batter into the lined cupcake tray.
- Top it up with some chocolate chips and bake in a pre-heated oven at 180°c (360°f) for 15 minutes until done.
- Remove and allow it to cool completely.
- Serve eggless chocolate chip muffins immediately or use as required.
