Ingredients

1/2 cup grated carrot
1/4 cup grated cabbage
1 cup parboiled rice (ukda chawal)
2 tbsp urad dal (split black lentils)
1/4 cup coconut milk (nariyal ka doodh)
1/2 tsp cumin seeds (jeera)
1 tbsp grated coconut
restricted quantity of salt

Method

  1. Wash and soak the parboiled rice and urad dal together in enough water in a deep bowl for at least 2 hours.
  2. Drain well, add the coconut milk and 1 cup of water and blend in a mixer to a smooth mixture.
  3. Transfer the mixture into a deep bowl, add the carrot, cabbage, cumin seeds, coconut and salt and mix well. Cover with a lid and keep aside to ferment in a warm place for 8 hours.
  4. Pour spoonfuls of the batter into the greased idli moulds and steam in a steamer for 10 to 12 minutes or till they are done.
  5. Serve the vegetable idli for babies and toddlers recipe hot with sambhar and coconut chutney.

  1. For the Vegetable Idli for Babies and Toddlers, combine the rice and urad dal in a deep bowl.
  2. Wash it using clean water.
  3. Drain the excess water using a strainer and discard it.
  4. Add more water for soaking.
  5. Cover with a lid and keep aside for 2 hours to soak. Again drain the water using a strainer.
  6. Again drain the water using a strainer.
  7. Transfer the rice and urad dal into a mixer jar.
  8. Add coconut milk to it. This will help in blending and making the mixture smooth.
  9. Add 1 cup of water for blending.
  10. Blend in a mixer till really smooth. No grain of rice or urad dal should remain behind.
  11. Transfer this blended mixture of Vegetable Idlis for Babies and Toddlers into a deep bowl.
  12. Add grated carrots to it. These add a dose of vitamin A which has a helping hand in vision.
  13. Add grated cabbage. This is a good source of fiber.
  14. Add cumin seeds for added flavour. Some babies don't like the mouthfeel of spices like cumin and mustard. In that situation, you can coarsely powder and add it to the batter.
  15. Add freshly grated coconut to it also.
  16. Add salt to make Vegetable Idli for Breakfast for Kids. You can avoid the salt completely as well. Alternatively add a restricted amount of salt. Remember that habit formed during these early years, stay with babies through their life.
  17. Mix well using a ladle.
  18. Cover with a lid and keep aside to ferment in a warm place for 8 hours.

  1. To make Vegetable Idli for Babies, heat enough water in a clean steamer or pressure cooker.
  2. Meanwhile, grease the idli moulds with oil so that the idlis do not stick to the bottom.   
  3. Pour a little batter into each greased idli mould.
  4. Steam in a steamer for 10 to 12 minutes or till the idlis are cooked. Make sure you steam the idlis on medium flame or else they will turn hard.
  5. To check whether they have cooked properly or not, insert a toothpick, knife or fork in the centre of the idli, if it comes out clean, your vegetable idlis are cooked.
  6. Cool slightly and remove the Vegetable Idli for Babies and Toddlers from the mould. If you are facing difficulty in removing the idli then dip a knife in little oil and loosen the edges using a knife or remove them with the help of a wet spoon.

    Method
     
    1. To make vegetable dalia khichdi for babies and toddlers, heat the ghee in a pressure cooker and add the cumin seeds.
    2. When the seeds crackle, add the asafoetida, turmeric powder, broken wheat, rice and all the vegetables and sauté on a medium flame for 1 to 2 minutes.
    3. Add approx. ¾ cup of water, salt and pepper, mix well and pressure cook for 3 whistles.
    4. Allow the steam to escape before opening the lid.
    5. Serve the vegetable dalia khichdi for babies and toddlers lukewarm with fresh curds.
