Making broken wheat and paneer patties
Cook bulgur wheat and cook for 10 minutes. Cool.
In a bowl add the broken wheat, carrots, onions, mushrooms, paneer, soya sauce, green chillies, whole wheat flour and salt.
Mix well with your hands. Divide the mixture into 8 equal parts and shape into patties. Cook the patties using a little oil on a non-stick tava, cooking on both sides till golden brown in colour. Serve broken wheat and paneer patties hot.

Ingredients
For Broken Wheat and Paneer Patties
1/4 cup broken wheat (dalia)
1 cup grated carrot
1/2 cup finely chopped onion
1/3 cup finely chopped mushrooms (khumbh)
1/2 cup grated paneer (cottage cheese)
1 tbsp soy sauce
2 tsp finely chopped green chillies
4 tbsp whole wheat flour (gehun ka atta)
2 tbsp finely chopped coriander (dhania)
salt to taste
2 tbsp oil for cooking
Method
For broken wheat and paneer patties
- To make broken wheat and paneer patties, clean and wash the broken wheat thoroughly.
- In a deep pan add water and bring it to a boil.
- Add the bulgur wheat and cook for 7 to 10 minutes. Drain and keep aside.
- In a deep bowl, combine cooked dalia, carrots, onion, chopped mushrooms, grated paneer, soy sauce, green chillies, whole wheat flour, chopped coriander and salt.
- Mix well with hand. If the pattice is not binding well then add 1 tbsp whole wheat flour and mix again.
- Divide the mixture into 8 equal parts and shape into patties.
- Heat 1 tbsp oil on a non- stick tava (griddle).
- Place 4 patties on the tava and let them cook on a medium flame for 2 minutes till golden brown on one side. Flip the side and cook for 2 more minutes until light golden brown from both the sides.
- Repeat steps 7 and 8 to cook 4 more patties.
- Serve the broken wheat and paneer patties hot with chutney.

This is what bulgar wheat (dalia) looks like. broken wheat (dalia) or cracked wheat is made by milling whole raw wheat grains coarsely. Wheat is cleaned and husked and then processed to the required size. It is highly nutritious as it does not undergo refining. Such cracked wheat has a large number of uses, especially as a dietary supplement. When broken wheat is cooked, it has a hearty, warm aroma and a delightful, grainy taste. It is slightly nutty and chewy.

Strain the dalia. Keep aside.

Heat a pan with boiling water.

Add the broken wheat (dalia).

Mix well.

Cook for 7 to 10 minutes. NOTE : 1/3 cup bulgar wheat gives 1 cup or 1/2 cup bulgar wheat gives 1 1/2 cups broken wheat. Check at 7 minutes if the dalia is cooked.

Once cooked, strain the dalia. Keep aside. Your cooked broken wheat is ready to use in Indian snacks, salads.

I wanted to try this as it seemed very healthy but I was very skeptical. It turned out to be very delicious. Just to make it crunchier I coated it with bread crumbs and refrigerated it for 10 mins before shallow frying.
