what is barley feta and spinach salad made of? Indian pearl barley with spinach and feta is made from easily available ingredients in India such as 2 cups cooked barley, 1/2 cup feta cheese cubes, 1 cup baby spinach (palak), 1 cup sliced green cucumber, 1/2 cup sliced radish (mooli), 1/2 cup cherry tomato halves, 1/4 cup chopped black olives and a dressing of olive oil, lemon juice and black pepper. Place the barley in a bowl of water. You can see that there is dirt from the barley and you need to clean it in water till clear.

The barley is washed.

Soak the clean barley in water for 30 minutes.

Boil 3 cups of water in a deep non-stick pan.

Add the soaked and drained barley.

Cook on a medium flame for 10 minutes.

In a small bowl put 1 1/2 tbsp lemon juice.

Add 2 tablespoons extra virgin olive oil or olive oil.

Add salt to taste. We added 1/4th tsp salt.

Add freshly ground black pepper to taste. We added 1/4th tsp pepper.

Mix well.

Keep aside.

In a deep glass bowl put 2 cups cooked barley.

Add 1/2 cup feta cheese cubes.

Add 1 cup baby spinach (palak).

Add 1 cup sliced green cucumber.

Add 1/2 cup sliced radish (mooli).

Add 1/2 cup cherry tomato halves.

Add 1/4 cup chopped black olives.

Add the olive oil dressing. ( Note, add the dressing just before serving as we will put the salad in the fridge to cool.)
