How to make Nutritious Pumpkin Carrot Soup

 

    1. For making the pumpkin carrot soup | Indian style pumpkin carrot soup | healthy kaddu gajar soup in pressure cooker | first cut the lal bhopla into cubes and keep them ready. You need to wash the pumpkin and remove the skin & chop it into even sized cubes.
    2. For preparing the bhopla soup, heat the oil in a pressure cooker. We have made use of vegetable oil but, you can even use olive oil or low-fat butter.
    3. Add the dill seeds.
    4. Sauté on a medium flame for 30 seconds. Suva dana have a potent flavor which help in enhancing the taste of the nutritious kaddu soup.
    5. Add the onions.
    6. Sauté on a medium flame for 1 minute or till they are soft.
    7. Add the pumpkin.
    8. Also, add the carrot. Both kaddu and gajar are high in beta carotene.
    9. Sauté on a medium flame for 2 minutes. This recipe makes use of a handful of ingredients which are easily available. The actual flavor of this pumpkin soup comes from the kaddu and gajar itself so, it is important to sauté them nicely so, as to get maximum flavours.
    10. Add 4 cups of water and mix well.
    11. Pressure cook for 2 whistles. Allow the steam to escape before opening the lid. The cooked pumpkin and carrots would look like this. Pressure cooking is the best way to prepare any soup as they retain all the nutrients from the vegetables on cooking.
    12. Cool them slightly and transfer into a mixer jar. Blend the mixture in a mixer till smooth. We have used a hand blender as it is easier.
    13. Pour the mixture into a deep non-stick pan. This heating must be done just before serving the nutritious pumpkin soup. Boiling it for more time or re-heating might lead to curdling of the soup.
    14. Add the salt, mix well and cook on a medium flame for 3 minutes, while stirring occasionally. Cook only till the mixture comes to a boil, switch off the flame and serve immediately.
    15. Add a little pepper.
    16. Mix well.

Nice, colourful and soothing soup... Quite easy to make once its been pressure cooked. Carrots lend their sweetness so well that you wouldn''t miss the salt much. Worth a try!!
