Gujarati khaman kakadi is made from easily available and cheap ingredients in India such as 1 1/2 cups cucumber cubes, 1/2 cup roasted and coarsely crushed peanuts, 2 tbsp finely chopped coriander (dhania)(optional), 2 tbsp freshly grated coconut, 1/2 tsp sugar and 1/2 tbsp lemon juice. We put our raw peanuts in a plastic container and store them in the fridge.
