2 1/2 cups finely chopped mixed vegetables
2 tbsp split mustard seeds (rai na kuria)
1 1/2 tsp chilli powder
1/4 tsp asafoetida (hing)
1/2 tsp turmeric powder (haldi)
2 tbsp salt
Method
- Combine the mixed vegetables with the salt and ½ cup of water and mix well. Bottle in a sterilised glass jar and leave aside for 1 day.
- The next day, remove 2 tablespoons of water from the salted vegetables. Combine the split mustard seeds, chilli powder, asafoetida and turmeric powder with this pickled water and grind to a smooth paste in a blender.
- Add this paste to the prepared pickle and mix well.
- Serve immediately or store refrigerated for upto 6 months.

Mam I like this recipe and I am going to try for sure can u tell me what all the veggies can be included in this specific recipe as I think some if the veggies will get spoil and I''m a new beginner (when it comes to pickles )

You can use vegetables like carrots, cauliflower, tendli etc.

This was soo good I am making it again, At first it tasted way too salty but after a month in the fridge it was perfect Vegetables crunchy and delicious a perfect addition to any meal
