  1. See the below image of list of ingredients for making eggless cornflakes cookies.

how to make the cookie dough

  1. To make cornflake cookies recipe | eggless cornflake cookies | easy Indian cornflake cookies | crunchy Indian cornflake cookies | in a deep bowl add ½ cup soft butter. Soft butter when creamed with sugar, softened butter traps air bubbles. This air expands during baking, giving the cookies lift and a lighter texture.
  2. Add ¼ cup brown sugar. The slight coarseness of brown sugar can also contribute to a more interesting textural contrast in the cookies. Brown sugar adds sweetness to the cookies, but it also provides a deeper, richer flavor compared to granulated white sugar.
  3. Add ¼ cup castor sugar. Caster sugar dissolves easily due to its finer granules.
  4. Add ½ tsp vanilla extract. Vanilla extract is the primary source of flavor in these cookies. It definitely elevates the overall sensory experience of your eggless cornflake cookies.
  5. Whisk well until smooth and fluffy.
  6. Sieve in 1 cup plain flour (maida). Flour provides the structure for the cookies. Flour helps bind the dry ingredients with the wet ingredients. This helps hold the cookie dough together and prevents it from crumbling.
  7. Add 1/8 tsp baking powder in the butter sugar mixture. Baking powder is essential for achieving the desired texture and volume in your eggless cornflake cookies by generating lift and air pockets within the dough.
  8. Add a pinch of salt.  A pinch of salt is a small amount, it can make a surprising difference in the final taste of your cookies.
  9. Mix well to make a soft dough.
  10. Divide the dough into 12 equal portions and roll each portion into a flat round cookie.
