For eggless banana muffins- To make banana muffins, in a deep bowl, add mashed bananas, oil, sugar, vanilla extract, milk, cinnamon powder and nutmeg powder. Whisk well.
- Sieve plain flour, baking powder and baking soda. Mix well to form a dropping consistency batter.
- Pour equal quantities of batter in a lined muffin tray. Tap it twice to remove the air bubbles.
- Bake in a pre-heated oven at 180°c (360°f) for 15 minutes or until done.
