To make sweet mathri, combine all the ingredients in a deep bowl and knead into a stiff dough without using any water. Cover with a lid and keep aside for 15 minutes. Divide the dough into 30 equal portions. Take a portion of the dough and knead it between your palms and flatten it lightly. With the help of your thumb press it in the centre to make a deep depression. Heat the ghee in a deep non-stick pan, deep-fry a few mathris on a slow flame till they turn golden brown in colour from both the sides. Drain on an absorbent paper. Cool completely and store in an air-tight container. Use as required.

We suggest you add milk gradually, as often the quantity of liquid required to knead the dough depends on the quality of the flour. 2. It is important to make a stiff dough and to fry the mathris on a slow flame. 3. Ensure to cool them completely before storing, to maintain their crispiness.

  1. To make sweet mathri recipe | meethi mathri | maida ki meethi mathri | Gujarati mathri, we first need maida. The maida should be free of lumps. Sieve it if necessary. Place 1¼ cups maida in a deep bowl. 
  2. Add 2½ tbsp powdered sugar to it. If you don’t have powdered sugar, grind the table sugar in a mixer and sieve it before use.
  3. Add 1 tbsp pf ghee to it. This adds slight flaky texture to the mathri.
  4. Add 2½ tbsp. of milk to it. This is binding the dough. You can add it gradually if you wish to because often the quantity of liquid required to knead the dough depends on the quality of the flour. 
  5. Add a pinch of nutmeg powder. 
  6. Add a pinch of salt. Though this is meethi mathri – tea time snack, a pinch of salt always helps to perk up the flavour of the dish. 
  7. Mix all the ingredients with your fingertips. 
  8. Knead into a stiff dough without using any water. A stiff dough is necessary to get crunchy mathri.
  9. Cover the bowl with a lid and keep aside for 15 minutes.
  10. Divide the dough into 30 equal portions.
  11. Take a portion of the dough and knead it between your palms and flatten it lightly.
  12. With help of your thumb press it in the centre to make a deep depression. Press it gently. 
  13. Heat the ghee in a deep non-stick pan, deep-fry a few maida ki meethi mathri to it and deep fry on a slow flame till they turn golden brown in colour from both the sides. Frying on a slow flame is very important so the mathris cook well from inside too. 
  14. Drain the Gujarati mathri – jar snack on an absorbent paper.
  15. Cool and serve sweet mathri completely and store in an air-tight container and use as required.

This sweet mathri recipe was always loved by me when I bought from a shop near my house and always wanted to try it so when I came across this recipe i immediately tried it and it was just awesome...Loved every bite of it...
