Shahi Alu recipe - How to make Shahi Alu

Ingredients

1/2 kg potatoes (select small, but not baby potatoes)
1/4 tsp saffron (kesar) strands (warm & powder)
1/2 cup curds (dahi)
oil to fry
salt and pepper to taste
2 green chillies, chopped
2 " ginger (adrak), chopped
1 tsp coriander (dhania) powder
a pinch garam masala
2 tbsp fresh cream
2 tbsp butter
Method


  1. Wash & peel the potatoes.
  2. Cut into ½” thick slices.
  3. Mix saffron & curd well.
  4. Coat the potatoes with the curd mixture & deep fry in hot oil till golden brown.
  5. Boil tomatoes with very little water & blend.
  6. Heat butter in a pan.
  7. Add tomatoes, minced green chillies- ginger, salt, pepper, dhaniya powder & garam masala.
  8. Cook till thick.
  9. Add fried potatoes & cook for 5 mts.
  10. Mix well & serve, topped with malai.
