Muscovado sugar is a type of sugar with a strong flavour of molasses. In regions where it is not available, you can use brown sugar to make the enticing muscovado sugar syrup. A common aspect of mexican cuisine, this refreshingly tangy syrup made of brown sugar, orange juice and aromatic spices, can be used on cakes, puddings, fruits or even toast!

Ingredients
200 gms brown sugar
75 mm (3") piece cinnamon (dalchini)
1/4 cup of fresh orange juice
1/4 tsp aniseeds (vilayati saunf)
Method
    Method
  1. Combine all the ingredients in a saucepan along with 1/2 cup of water and bring to a boil, while stirring occasionally.
  2. Simmer over medium flame for 5 minutes.
  3. Use as required.
